         The first time I had ever tasted oven roasted carrots, I knew I could do more, or do it better. I absolutely loved the flavor, but I knew there had to be a way to kick it up another notch and give them even more flavor. These are not just simple Honey glazed carrots, these are Honey Garlic glazed carrots! These can go as a side to any main course. There will likely never be any left over when you serve these at dinner. That is a good thing! When vegetables disappear it is always a great thing in my home.

            If you’re like me, you always have a bag of carrots available. Sometimes it is getting to the end of their waiting time in the refrigerator. Not any longer, it will be difficult to keep carrots on hand. The family is going to be asking for these continuously. When you add Sweet Potatoes to the baking dish, this can make it a perfect combination.

There are many possibilities. You can swap out Maple Syrup, you could add cinnamon, try some herbs.

There is a variation floating around the web, where you wrap a piece of bacon around each carrot and then proceed as directed. I do have some friends who like to cook and crumble some bacon and toss it right in with the carrots. They say there is nothing better. My mom tosses in chopped walnuts for a little crunch and added flavor. I tend to stick with the tried and true, only because I am in too much of a hurry to eat them as soon as possible.

            Can I add in other vegetables?

Certainly, you could try some red onion, brussel sprouts, chunked sweet potato or even squash.

            2 tbsp Olive Oil

            2 tbsp Honey

            ½ tsp garlic powder

            Salt and Pepper

How to make Oven Roasted Honey Glazed Carrots

FIRST STEP:

Preheat the oven to 400*

Wash the carrots and pat dry with a paper towel

SECOND STEP:

Lightly spray the baking dish with non stick cooking spray

In a bowl, combine the honey, olive oil, garlic powder and salt and pepper

THIRD STEP:

Pour this mixture over the carrots and toss to coat all carrots

FOURTH STEP:

Bake at 400* for 35 to 45 minutes.
