What do you need to make Pasta Primavera

            1 lb package Penne Pasta, cooked according to package directions, rinsed and drained after

            ½ Red Onion, sliced thin

            2 cups broccoli florets

            1 cup halved cherry tomatoes

            ½ red bell pepper, cut into strips

            1 cup yellow squash cut into cubes

            2 ½ tsp garlic, freshly minced

            1 cup mixed peas and carrots, frozen

            4 tbsp butter

            ½ cup vegetable broth

            ½ cup heavy cream

            ½ cup freshly shredded Parmesan Cheese

            ½ lemon, just the juice

            Salt and pepper, if desired

            Parsley as a garnish

How to make Pasta Primavera

FIRST STEP:

Cook the pasta according to the package, drain and rinse well

SECOND STEP:

In a large skillet, melt the butter

Add in the peppers, and the red onion. Saute for 2 to 3 minutes

Add in the yellow squash and the broccoli, saute for roughly 2 or 3 minutes

Stir in the garlic, the peas and carrots, cherry tomatoes and salt and pepper, if desired. Saute for an additional minute.

Simmer until the sauce begins to thicken some.

Add in the Pasta and stir together
