This delicious bread bake has just become my go-to. I indulge a few times this week with a slice with a cup of coffee to get my day going on a delicious foot. Oddly enough, I have normally not cared for pecans. In feeling so, I have often avoided pecan pie itself just because it sounded strange. I mean, nuts in a pie when you have never had it before can be a little off putting! It was also more of a holiday type pie in my mind, so when I did finally have a hankering for pecan pie it was a rare and seasonal experience. It was in wanting to create something pecan pie related, that I could have outside of the holiday season, that caused this beautiful recipe to be born.
The throw together for this recipe is much simpler than a pecan pie too! Your simple process starts with slicing bread and throwing it in with the cream, eggs, and dark corn syrup. I know that sounds crazy sweet. Trust me though, when I say it distributes perfectly within the dish and is not overbearingly rich like many pecan pies are. It’s a finger licking bread bake and I know you will love it!
Each ingredient compliments the next and is highlighted by a brown sugar crumble on top you will go crazy for! The last delectable layer is then a caramel sauce once the pecan pie bread bake is finished. It’s a treat dessert with all that yummy goodness. Also, just know that at any point in making this recipe, you are in control of how much sugar, corn syrup, caramel, etc. to use. If you are watching your sugars, on a diet, or have people you’re serving this to with health issues – you can still get an amazing result with using less sweetness. For instance, when I serve this to a few family members of mine, they prefer to leave the sauce and brown sugar crumble off the top and have a savory piece of dessert. COOK’S NOTES
A loaf of bread that is a day or two old and sort of stale is perfect for this type of bread bake. The reason being that the bread has more ability to soak up all the liquids that get poured in. What this means is that the dish will not be soggy or soup like.
As far as serving this dish, you can serve with some whipped cream. Whipped cream has a very mildly sweetness, so it won’t add sugar to the recipe or overpower the flavors. You can purchase whipped cream in a tub, in can, or you can make it yourself from heavy whipping cream in a stand mixer. I know some people who like to add fruit or yogurt as a partner. I also enjoy this recipe with a scoop of ice cream too! As I mentioned, it’s so great with a cup of coffee by itself. However you serve it, I know you will enjoy it!

1 lg loaf French bread
4 lg eggs, slightly beaten
1/2 cup butter, softened
8 oz heavy whipping cream
1 tbsp vanilla
20 oz whole milk
1 cup sugar
1 cup pecan, chopped
1 1/2 cup brown sugar, packed
1/8 tsp sea salt
How to make Pecan Pie Bread Pudding Recipe
FIRST STEP:
Set oven to 350F.
Cut the French bread into cubes and add to a big bowl.
SECOND STEP:
In a second bowl, add milk, cream, salt, sugar, vanilla, and eggs.

Beat well.
Pour the egg mixture over the cubed bread. Allow to sit for ten minutes.
THIRD STEP:
In a third bowl, add butter, chopped pecans, and the packed brown sugar.

Add half the butter and pecan mixture onto the bread and egg mixture in the pan.
Add the rest of the bread mixture into the pan and then top with what is left of the butter and pecans.
FIFTH STEP:
Allow the dish to bake at 350F for 45-55 minutes.
When the dish if done, the center will be a little wobbly, but edges will be solid. The center will solidify soon.
Let the dish sit and cool off for at least half an hour before enjoying!
