The spice flavor inside of these bars is astronomical.

            Yes, I cheated when I changed up this recipe. I started it with my pumpkin cake recipe. I had cut back the amount of baking powder, the bars will not lift as much as the cake does. This is the point, we want the moist and soft bars. We also use less egg in the recipe for bars. The recipe makes it less cakey. This recipe is so simple that it is almost impossible to mess up. This recipe also makes enough for 36 bars.

            We have all fallen in love with the moist type of pumpkin bars in the fall and around the Holidays. When we crave something that deeply it has to be the perfect bar. Pumpkin bars make memories over all holidays. Families enjoy sitting and playing games while sharing a plate of pumpkin bars. This has been ongoing for generations.

Chopped pecans can be added to the Pumpkin batter before they are baked. There are many people that prefer walnuts in pumpkin bars. You will also find that many people prefer dusting the bars with simple confectioner’s sugar and leaving the frosting off.

What do you need to make Pumpkin Bars with Cream Cheese Frosting

            2 eggs

            1 cup sugar

            ½ can pumpkin puree

            ½ cup oil

            1 cup all purpose flour

            1 tsp baking powder

            1 tsp cinnamon

            ½ tsp baking soda

            ¼ tsp salt

            ¼ tsp ground ginger

            ¼ tsp cloves

Frosting:

            1 package of cream cheese, softened

            ½ cup butter, unsalted and softened

            1 tsp vanilla

            Whole pecans for decorating

How to make Pumpkin Bars with Cream Cheese Frosting

FIRST STEP:

Preheat the oven to 350*

Grease the baking pan

SECOND STEP:

In a large bowl, combine the eggs, oil, pumpkin and sugar

Stir in the flour, baking powder, baking soda, salt, ginger, cinnamon and cloves

THIRD STEP:

Pour the batter into a greased baking pan

Place on the center rack of the oven and bake for 25 to 27 minutes. Test with a toothpick, if it comes out clean, the bars are done.

FOURTH STEP:

In a medium sized bowl put the butter and cream cheese and cream together.

Add a tsp of the vanilla extract

FIFTH STEP:

Sift the confectioner’s sugar and mix it in completely until it is fluffy, to the way you like it.
