I know at my house we are trying to cut back on some of the red meat we eat. To do this, it means being creative with the white meat. This recipe is for pork chops that are roasted with different colored potatoes and some onion wedges.

This dish is simple, hearty and flavorful. It is a budget friendly meal that is somewhat versatile. I say somewhat because if you change it too much, then it definitely is not the same.

When you are looking for a meal to make after a long and busy day this is the one that you need to try. It is so simple, takes very little effort but will taste like you worked forever on the dish.

            Should I use boneless or bone in chops?

That choice is up to you, I prefer buying a pork loin and slicing it into chops myself. If you use bonelin, be sure to adjust the cooking time to ensure the chops are done.

            Can I add other vegetables to the sheet pan?

Of course! There is no limit to the ingredients that you could have. Try it with broccoli, cauliflower, brussel sprouts, or halved ears of sweet corn.

            Should I serve this dish with another side?

You could add vegetables, a side salad or leave it as is.

What do you need to make Roasted Pork Chops with MultiColored Potatoes

            3 tbsp Olive Oil, divided in half

            4 Boneless Pork Chops

            ¼ tsp Cayenne Pepper

            1 tsp Worcestershire Sauce

            ½ tsp Cumin

            3 tsp Garlic, freshly minced

            1 tsp Salt

            ½ tsp Pepper

            2 pounds Baby Potatoes, multicolored, cut in half

            1 Red Onion, cut into wedges

            1/2 tsp Rosemary dried

            ½ tsp Paprika

How to make Roasted Pork Chops with MultiColored Potatoes

FIRST STEP:

Preheat the oven to 400*

In a bowl combine half of the Olive Oil, Worcestershire Sauce, cayenne pepper, cumin, minced garlic, salt and pepper

Toss with the pork chops to season the chops well

Cover a baking tray with parchment paper

SECOND STEP:

Lay the Pork Chops out in a single layer

Add the potatoes and onion to the bowl with the remaining Olive Oil, rosemary, Paprika and salt and pepper

Lay the potatoes and onion out on the tray with the pork chops

THIRD STEP:

Bake for 20 to 25 minutes until the Pork Chops are done and the potatoes are soft
