Seafood Salad

            A delightful Seafood Salad that combines a mix of imitation crab meat and shrimp, mixed with a load of vegetables and all combined into a creamy sauce. Whether it is for lunch or a quick dinner, this does not take too long to make and is quick to serve. This is truly one of those salads that you can throw together quickly when you are craving seafood.

            The sauce is a very simple homemade dill sauce with mayonnaise, fresh dill, Old Bay seasoning and lemon juice. The flavors combined together make this one of the best seafood salads I have ever tasted.

This seafood salad makes a great midday lunch, a quick bite with friends and even a wonderful dinner. I have yet to find anyone who does not like this version of Seafood Salad.

            Again, I have seen many versions of Seafood Salads, this one is the easiest and most tasty one I have eaten so far. I will probably not have to try any other versions since this became such a hit at my house.

Frequently Asked Questions:

            Should I use fresh crab meat?

You could,  I prefer to use the imitation crab meat since it is already cut into smaller pieces. Fresh will need some additional work.

            Can I use dried dill?

Yes, you can, but use half the amount as stated for fresh dill. If however, you could find some fresh dill, the flavor is far superior to the dried.

            Can I use a Vidalia onion?

The taste difference between a Vidalia and a Red onion is a drastic difference. The Red onion also adds some added color to the Seafood Salad.

            Should I use fresh frozen shrimp or just fresh?

Again it is a matter of choice. I prefer to use raw shrimp and then slightly boil the shrimp and put it into an ice bath immediately.

            How do I store this seafood salad?

This can be stored in an airtight container and then placed into the refrigerator for up to 2 days.

What do you need to make Seafood Salad

            8 ounces raw shrimp, then boil and give an ice bath

            8 ounces imitation crab meat

            ½ cup diced celery

            3 tbsp diced red onion

            ½ tsp Old Bay Seasoning

            1 lemon, cut into fourths

            ½ cup mayonnaise

            2 tsp lemon juice

            1 ½ tbsp Fresh dill

            Salt and pepper to taste

How to make Seafood Salad

FIRST STEP:

Add water to a saucepan, add the quartered lemon and salt. Bring to a boil

Add the shrimp and cook for 1 to 2 minutes. Immediately place into a bowl of ice and water.

Drain the shrimp and pat dry with paper towel

In a bowl, place the imitation crab meat, the shrimp, seasoning, onion, celery, salt and pepper and the dill, along with the mayonnaise
