Seven Layer Burritos

            Burritos are another favorite in my family. Well, they just love food! They do come running for Mexican night however. The burritos are so ebay to make, and super quick also. This recipe has no meat involved, which means heating the beans is probably the hardest work for this meal. With school back in session, there have been nights that I have not managed to start preparing dinner until it was almost bedtime. Just too busy!

 

            That is why meals like this are perfect for my family. They are still healthy, they get the nutrients required, the food is super tasty and I am not in the kitchen forever! With very few ingredients, refried beans, tomatoes, chopped lettuce, onions and whatever others my family requires, makes for fast food and ready to eat almost immediately.

            There is a way to make this even easier on yourself. After heating up the refried beans, set all the toppings out and let each person top and roll their own tortilla. This way, there is no complaint from anyone about having to eat something they do not like. My mother used to call this, ‘Fend for yourself’. There was a night that I turned this dish into bean burrito nachos.

The family was stumped at first, but decided that it was a perfect way to eat burritos. I used some plain tortilla chips, and also had nacho chips available. I tell you, my kids were delighted!

            Can I add meat to the meal?

Of course, however, keep in mind it will not be as quick of a meal as it could be.

            Can I skip out on the tortillas?

You could! This would turn into more of a Mexican bean Salad. There is nothing wrong with that. This dish will taste great as a burrito, as a salad or as a dip.

            This dish reminds me of a version of 7 layer dip.

This could be turned into the 7 layer dip. Basically that is all it is. If you were to go to a Mexican restaurant and order a bean burrito, a meatless Mexican Salad, and 7 layer dip, you would find that you receive three plates with the exact same ingredients. However, they may toss some black olives into one or two, to make them look different.

What do you need to make Seven Layer Burritos

            2 cans refried beans

            2 cups Mexican Cheese Blend, shredded

            1 cup sour cream

            2 cups shredded lettuce

            ½ cup black olives

            2 large tomatoes, diced

            1 ½ cups guacamole, homemade or store bought

            8 large flour tortillas

How to make Seven Layer Burritos

FIRST STEP:

Heat the refried beans on the stovetop or in the microwave

Lay the tortillas out on a plate or on the counter

SECOND STEP:

Place a line of refried beans in the center of the tortilla, using a spoon

Top the beans with sour cream, shredded cheese, lettuce, black olives, diced tomatoes and the guacamole

Roll the burrito up as tightly as possible and slice in half at a diagonal

FOURTH STEP:

Serve with fresh salsa on the side
