This is a super easy layered chicken enchilada dinner. We will not only make this tasty food one of the best dishes you have ever tasted, we will do it by layering the flavors together. That way with each bite you take, you get a taste of each ingredient in the recipe. Who does not love a great Mexican dish? I am almost 100% positive that everyone has eaten Mexican cuisine at some point in their lives.
For me, Mexican food is one of my many weaknesses! This dish also has many variations to it. I am sure you will come up with some of your own.
You can use any type of chicken, any cut of chicken. You could use leftover chicken from earlier in the week. You can pick up a rotisserie chicken on your way home from work.
I have used turkey, ground beef and even sirloin as the meat in this dish. I do recommend doing the work yourself. Any dish always tastes better when you have made each part of the dish yourself.

You can assemble this dish up to 4 hours before you intend to cook it and then serve it.
Can I switch the meat?
You could use whichever type of protein that you choose. If you prefer a vegetarian dish, use two cans of beans in place of the meat.
Should I use Corn Tortillas or flour Tortillas?
You can use whichever you prefer. This recipe will work with either of those types of tortillas. This recipe actually calls for tortilla chips. You can use plain chips or you can use nacho cheese if you like.
What should I serve with this dish?
My favorite side dish to have along with this enchilada casserole is refried beans. A dinner salad is always a great plan. You could also serve it with fruit. When the casserole is done, you can spoon a serving over cooked rice if you want. I like to have dishes with salsa, sour cream, lettuce and fresh chopped tomatoes, so that people can serve themselves.

2 ½ cups of cooked and shredded chicken
1 can diced tomatoes with green chilis
1 can cream of chicken soup
4 ounce can of chopped green chilis
2 tsp dry taco seasoning mix
¼ cup sour cream
2 cups Mexican or Fiesta blend cheese, shredded
½ to 1 bag of tortilla chips

FIRST STEP:
Preheat the oven to 350*
Lightly spray a casserole dish
SECOND STEP:
Shred the chicken
In a medium skillet, combine the diced tomatoes, green chilis, sour cream, taco seasoning and the condensed soup.

Cook until heated through, not boiling
Add in the chicken and one cup of the cheese

Stir until melted
Place a good amount of chips at the bottom of the casserole dish
Spoon half the chicken mixture over the chips

Repeat steps 8 and 9 one more time each
Sprinkle the top with the remaining shredded cheese
