            Admission right off the top here, an Authentic Sicilian Chicken Soup will boil a whole chicken to get the rich chicken broth. However, you all know me, I do things in the easiest way I can in order to save time and money in the kitchen. Besides, who wants the messy job of pulling meat off a chicken?

            It is that time of year when soup is our number one meal in our house. When I have time, I cook some ahead and freeze them in single serving containers. It is just so much easier to grab a bowl and heat it up when we want it. Like on those days after sledding down the hill for some winter enjoyment.

            My crockpot also gets more use at this time of year also. Why not, I can throw the ingredients in and let it simmer all day and come home to hot soup ready for me. Chili, stews, soups of all types. Cream soups, broth soups all of it, we love them all! Again, I altered this recipe so that it is easy enough for everyone to make. It helps on those days when you do not have time to cook or spend forever in the kitchen. The aroma when you walk into your home after the soup has been slowly cooking is heavenly!

            I love to make thick slices of garlic cheese bread to go along with the soup, I will also make a colorful dinner salad to go along with it. This makes it just the right amount of food for a meal in our home.  If I am lucky, I will be able to put some soup in single serve trays and freeze for work days during the week.

            Can I add more flavor somehow?

Yes! You can add in parsley, cilantro, rosemary, onion or garlic powder. Any herbs you have in your pantry are fair game.

            How do I store this soup?

Cool the soup completely, then place into an airtight container and into the refrigerator. It will last for 3 days.

            What can I serve along with this soup?

Anything! I mean literally anything! Sandwiches, crusty bread, french fries, crackers, or even a salad. You may find the perfect combination like Grilled cheese with Tomato Soup.

            Do we have to use Ditalini pasta?

No, you can use the pasta of your choice. This is the closest I found to Sicilian Chicken Soup pasta, without making it myself.

What do you need to make Sicilian Style Chicken Soup

            2 cups of shredded chicken

            4 celery sticks, chopped or sliced

            1 cup of baby carrots

            2 green bell peppers, chopped

            1 can sliced white potatoes

            1 can fire roasted tomatoes

            5 garlic cloves crushed

            ¼ cup fresh parsley

            Salt and pepper to taste

            6 cups water

            8 ounces Ditalini Pasta

FIRST STEP:

Place the water, chicken, potatoes, carrots, peppers, and tomatoes into the crockpot
