Slow Cooker Chicken Teriyaki

            Juicy Chicken breasts that are seasoned with ginger, soy sauce, garlic and some honey, cooked slowly to soak up all the flavor in the ingredients. This dish is best served over a plate of white rice.

Chicken Teriyaki is one of my uppermost favorite dishes. I always order when I eat out. I have it made when we eat out. I can order it from my favorite Japanese restaurant and also from my favorite Chinese restaurant. It’s like Chicken Teriyaki wherever I go.

            Then to be able to throw food into my crockpot and have dinner almost ready when I get home is the best. All I have to do is make the rice when I get home. The whole house smells yummy when I walk in when using the slow cooker. This dish is surprisingly pretty healthy, aside from the sodium in the soy sauce,  but you could use a low sodium version and eliminate most of that sodium.

            Now that school is back in session as well as all those after school activities, meetings, games, homework and friends, I need the easiest meals I can find. Using my crock pot is the easiest way I know to make great food and have it ready by dinner.

            Can you cook rice in the slow cooker?

You could cook virtually anything in the slow cooker. Rice would have to be cooked separate from the chicken however. Plus, it will take longer to cook in the crockpot than it would on the stove top.

            Can I add additional vegetables to the teriyaki?

You can definitely do that. The common choices would be broccoli, cauliflower, carrots and snow peas. You can put your touch on this dish and add your favorites.

            Should I serve it with white rice or brown rice?

If your family eats brown rice, go ahead and serve that. It is a healthier rice. White rice is the most common though. You could serve it with Basmati, Jasmine or long grain white rice. You could use quick cooking rice or take the time and make the actual long grain rice.

            How do I store this?

If there is any left, you can place it in an airtight container and place it in the refrigerator for up to 4 days. Store it separate from the rice. Keep the rice in an airtight container also. To reheat, the rice can be placed in hot water and brought to a quick boil. To heat the Chicken Teriyaki, you can use the microwave to heat to desired temp.

            2 boneless chicken thighs

            1 cup chicken broth

            3 tbsp brown sugar

            ½ cup Teriyaki Sauce

            3 tsp garlic, minced

            2 tbsp honey

            Chopped green onions for garnish

How to make Slow Cooker Chicken Teriyaki

FIRST STEP:

In the slow cooker put the chicken broth, Teriyaki Sauce, brown sugar, garlic and honey

Stir to combine well

SECOND STEP:

Cut the chicken thighs into bite sized pieces and add them to the slow cooker

Toss the chicken in the sauce to coat each piece

THIRD STEP:

Place the lid on the slow cooker, turn the temperature to high and cook for 4 hours

FOURTH STEP:

Serve over white rice

Garnish with chopped green onions before serving
