Snickerdoodle Bread

         Quick breads are my saving grace! I am not one that likes to take chances with yeast. I can do it and my bread comes out fine, however, I sometimes wonder if it is worth all the nerves that go along with it. So when I came across a recipe for a quick bread, I was elated. Even more so when I found out it was for Snickerdoodle bread!!!

            Snickerdoodle cookies are a favorite holiday treat that is always on the cookie tray during the festivities. At least as long as it lasts. So now, I am going to surprise the gang with bread that tastes just like their favorite cookies.

I know it seems utterly impossible, you have to trust me guys!! This recipe calls for cinnamon chips. I realize they can be difficult to locate. They are generally only sold around the holidays in most areas. I have spoken with a few people who have used white chocolate chips or toffee chips.

They have stated and swear that either of those choices will taste superb in the bread. The cinnamon chips are becoming more popular, I believe that stores will begin to stock these regularly.

            How many loaves does this recipe make?

This will make two loaves. Do not overfill the loaf pan. If the batter reaches the top as it is baking, it will collapse in on itself and no longer rise.

            Can I make this batter ahead of time and bake later?

Yes you can. Make the batter completely and cover the bowl. Store it in the refrigerator for up to 24 hours.

            How do I store this bread?

It can be left on your counter as long as it is covered, it will last for 4 to 5 days on the counter. If you cover and store the loaf in the refrigerator, you will be good for 6 to 8 days. It can also be frozen and remain good for up to 3 months.

What do you need to make Snickerdoodle Bread

            1 tsp baking powder

            2 ½ cups all purpose flour

            1 tsp vanilla extract

            ¾ cup sour cream

            3  eggs

            1 cup butter, softened

            2 tsp cinnamon

            ½ tsp salt

            2 cups white granulated sugar

            1 package cinnamon chips

Topping:

            3 tbsp granulated sugar

            3 tsp cinnamon

How to make Snickerdoodle Bread

FIRST STEP:

Preheat the oven to 350*

Grease 2 loaf pans

SECOND STEP:

Cream the butter,  sugar, cinnamon and salt. Mix until fluffy

Add the eggs, beating after each egg

THIRD STEP:

Add in the sour cream and the vanilla until well mixed

In a separate bowl, combine the flour and baking powder

FOURTH STEP:

Add to the egg mixture and mix well

Stir the cinnamon chips into the batter

FIFTH STEP:

Spoon the batter into the loaf pans. Do not fill more than ⅔ full.

In a small bowl, mix 3 tbsp granulated sugar with 3 tsp cinnamon

SIXTH STEP:

Sprinkle this mixture over the top of the batter

Bake for 35 to 38 minutes, until a toothpick inserted in the center comes out clean

Allow the loaves to cool completely before removing from the loaf pans
