Strawberries and Cream Lush

Strawberries and Cream is the perfect summer dessert. However, I do not believe in having certain desserts at only certain times of the year.

We bring out one of my favorites just before fall to remind all of us that these flavors and types of desserts are perfect year round.

Who does not like Strawberries and Cream? I remember eating this at my Grandparents house, just strawberries drizzled with a heavy whipping cream, that was not whipped.

This lush dessert is a take on that wonderful flavor and all those memories from my childhood. This is made with a cookie crust and covered with cream cheese, pudding and strawberries. Of course it must be topped with nuts to make it extra special.

            Can I use graham crackers for the crust?

Yes, graham cracker crust is actually delicious with this dessert.

            Can I use different fruits?

Again, yes! Any fruit you choose will make this a spectacular dessert. Bananas, any type of berries and one day I am even going to try mandarin oranges.

            Can I store this on the counter?

This dessert has cream cheese and whipped topping, it should always be kept in the refrigerator until serving.

What do you need to make Strawberries and Cream Lush

            1 cup mixed nuts, finely chopped

            1 cup Nilla Wafer Cookies, chopped fine

            1 stick butter, unsalted, melted

            1 cup Confectioners Sugar

            8 ounces Cream Cheese, softened to room temperature

            1 large tub Cool Whip Whipped Topping

            2 small boxes instant vanilla pudding mix

            3 cups whole milk, 2% is okay too

            1 quart fresh strawberries, sliced

How to make Strawberries and Cream Lush

FIRST STEP:

Crush the mixed nuts and the Nilla Wafer cookies in a blender on pulse until you achieve a medium fine crumb

Add in the melted butter and pulse until combined

SECOND STEP:

Place the crumb mixture into a 9×13 cake pan and press down using a flat bottom glass. Be sure to make the layer even

THIRD STEP:

In a medium bowl combine the Confectioners Sugar, 1 ½ cups of Cool whip and the cream cheese.

Beat until smooth

FOURTH STEP:

Pour this over the crust mix, in an even layer

FIFTH STEP:

In another bowl combine the milk and the instant pudding mix, beat until the pudding is formed

Layer this over the Cream cheese mix in the pan

Place a layer of sliced strawberries over the pudding layer, save some of the strawberries to put on the top as a garnish

SIXTH STEP:

Cover with the remaining Cool Whip evenly.

Chop some of the remaining strawberries and sprinkle over the top of the whipped topping layer
