To make it even better, this bread comes out super moist, flavorful and soft. It is also filled with so much strawberry flavor you will not believe it when you get strawberry in every single bite.

            Since I used oil instead of butter, there is no need for a mixer. This recipe is only enough for one loaf of banana bread, so plan ahead and make two while you can.

Really guys, I have never made an easier banana bread than this. I am so tempted to get rid of all other quick bread recipes and use this one as a base mix for all my breads. Yes, I said that, this recipe is so versatile that you can use it for almost any quick bread recipe you want to make.

            Could I add more fruit to this recipe?

I am not sure if you mean extra strawberries or more types of fruit. I would say that adding additional strawberries to the batter would be okay, just do not over do it too much. To add more fruit, you may want to cut back on the amount of strawberries before you add other types of fruit.

            Can I substitute something else for the sour cream?

Certainly, you could substitute Greek yogurt in place of the sour cream.

            How do I store this bread?

I wrap it tightly in plastic wrap and then place it in the refrigerator. It will last for 5 days with no issues. You could also wrap it in plastic wrap and then aluminum foil and then place it in the freezer for up to 3 months.

What do you need to make Strawberry Banana Bread

            ⅓ cup vegetable oil

            1 egg

            ½ cup light brown sugar, packed

            ¼ cup granulated sugar

            ¼ cup sour cream

            2 tsp vanilla flavoring

            1 ¼ cup flour, plus additional if too moist

            ½ tsp salt

            ½ tsp baking soda

            ½ tsp baking powder

            ½ tsp salt

            3 medium bananas, mashed

            1 ½ cup fresh strawberries, quartered

How to make Strawberry Banana Bread

FIRST STEP:

Preheat the oven to 350*

Lightly spray a loaf pan with non stick spray

In a large bowl combine the oil, egg, brown sugar, white sugar, vanilla  and sour cream

Whisk to combine

SECOND STEP:

To this mix, add 1 ¼ cup flour, salt, baking soda, baking powder and salt

Just mix until it is combined

THIRD STEP:

Gently fold in the mashed bananas

Toss the strawberries lightly in flour and then fold gently into the batter

FOURTH STEP:

Spoon the batter into a prepared loaf pan and place in the oven

Bake for 55 to 60 minutes, you can test with a butter knife to ensure that it is done or use a toothpick

When done, remove from the oven and let sit in the loaf pan for about 15 minutes before removing and placing on a cooling rack
