            This is very much considered to be a dump cake, a happy dump cake at least! The word sunny is in the name. How can one be any happier when eating this dessert? This is a quick cake, with crushed pineapple, a cherry if you want and whipping cream.

It is bright and pretty. After seeing all that written, it makes me realize how dangerous a cake like this is. So simple and easy to make.

However, we are going to be pushing this cake to the next level by adding eggs, oil and the pineapple. The topping, or frosting if you want to call it, is made of pudding, whipped cream, crushed pineapple and mandarin oranges.

This cake will make you smile just looking at it. Wait until you actually get to taste it. This cake comes out so light and fluffy you will want to make it every day.This is one cake that you will have to exercise restraint once you make it. This cake is perfect for Easter, for any church occasions or even a potluck buffet. I have made it for Bridal showers, baby showers and even summer birthdays.

What do you need to make Sunny Pineapple Orange Cake

            1 box yellow cake mix

            5 eggs, large

            1 small box instant vanilla pudding mix

            1 can Mandarin Oranges, drained and in segments

            2 tsp orange extract

            ⅓ cup oil

Topping:

            1 small box instant vanilla pudding mix

            1 container of Cool whip, 8 ounces

            8 ounces drained and crushed pineapple

            Mandarin Orange segments for garnish if desired

How to make Sunny Pineapple Orange Cake

FIRST STEP:

Preheat the oven to 350* and prepare 2 9 inch round cake pans

Mix the cake ingredients together until smooth and well combined

SECOND STEP:

Pour batter evenly between your two greased cake pans

Bake for 20 to 25 minutes, until cakes are done when toothpick tested

THIRD STEP:

In another mixing bowl mix together the crushed pineapple and the box of instant vanilla pudding mix

Gently fold in the whipped topping and be sure to combine well

Place one layer on a cake plate

Add a layer of icing to the top of the first layer

Place the second layer on the top

Cover the top and sides of the cake
