Taco Pie

         Sometimes it gets way too easy to fall back on the same meals week after week. You may be too tired from a long day, maybe you forgot to do shopping, whatever the reason, this is something that needs to change. Even if you choose to have Mexican night, it does not need to be the same food each week. There is so much variety, so many ways to mix up a recipe and create something new.

We all have those certain foods that people do not want to switch, such as pizza or tacos. There are ways to change these up also, so it is not the same old thing every time. So to prevent boredom, I will bring you a great dish.

            Here you have the same great flavors combined to bring your family taco night. The manner in which it is put together. My family and I like our tacos with ground beef, this can easily be switched up for turkey or chicken.

I also use the low carb tortillas to cut even lower on the carbs. For those of you who like to switch things up as far as ingredients, the sky’s the limit. Add avocado, spinach, mango, anything that makes your family happy.

This dish freezes beautifully. It can stay in the freezer for months.

            How do I store this Taco Pie?

All you need to do is wrap it tightly and set it in the refrigerator. It will be good for up to 4 days. Place it in an airtight container and it will be good for months in the freezer.

            Can I use different tortillas?

Certainly, there are tons of tortillas available. There are the tomato and herb, spinach flavor and a slew of others.

What do you need to make Taco Pie

            6 inch tortillas, I used 6 of them

            1 packet of taco seasoning

            1 onion, diced

            15 ounces crushed tomatoes

            1 ½ cups frozen corn

            1 cup black beans, optional

            1 pound lean ground beef

            1 cup Mexican Fiesta cheese, shredded

How to make Taco Pie

FIRST STEP:

In a skillet, brown the ground beef and add the onions.

Cook until the onions are translucent

SECOND STEP:

When the meat is done cooking, drain any fat

Sprinkle in the packet of taco seasoning

THIRD STEP:

Add the 15 ounces of crushed tomatoes

Add in the corn and simmer for 10 minutes

FOURTH STEP:

Lightly spray a round casserole baking dish

Preheat the oven to 350*

FIFTH STEP:

Spoon 1 cup of the meat mixture into the bottom of the casserole dish

Cover with three of the tortillas, yes they will overlap slightly

SIXTH STEP:

Spoon on 2 cups of the meat mixture

Sprinkle ½ cup of cheese on the meat

SEVENTH STEP:

Cover with the three remaining tortillas

Top with the remaining meat mixture, cover with aluminum foil

EIGHTH STEP:

Bake for 25 minutes, remove the foil

Sprinkle the remaining cheese on the top and place back in the oven

NINETH STEP:

Let bake until the cheese is melted.

Cut into 6 pieces and serve with a garnish of sliced green onion
