Tasty Strawberry Bread

            Some of you may have an overabundance of strawberries in your garden, or maybe you bought more than you needed. If the prices are good, then I am glad you found a sale. This Strawberry bread is going to become a new favorite! If you can, I would get more of those strawberries and freeze them so that you always have some.

            When this bread is baking, your home smells so warm and cozy and it makes your mouth water with the delightful smells.  You may be worried that it is too hard to work with since fresh fruit has so much of its own moisture.

This recipe is fail proof. That concern should not worry you ever again. This is a quick bread, so you need to be sure that you do not overmix the batter. You also need to remember to grease and flour the cake pan or loaf pan so that the bread comes out easily.

You could use what they call cake release. It is grease and flour in a can.

            Can I use different fruits?

Yes, I actually borrowed this recipe from my cherry bread file. You could use any fresh fruit. It is between 2 and 2 ½ cups of fruit that is used.

            Can I store this bread on the counter?

Due to the fresh fruit in the bread, you will need to keep it stored in the refrigerator.

            Can I freeze this bread?

Because of the moisture of this bread, I would not freeze it. It could end up being too moist as it thaws.

What do you need to make Tasty Strawberry Bread

Bread:

                        ¾ cup sugar

                        ½ cup oil

                        ½ cup milk

                        1 tsp vanilla

                        1 egg

                        1 tsp vanilla

                        2 tsp baking powder

                        ¼ tsp salt

                        2 cups flour

                        2 cups strawberries

                        2 tbsp flour

Glaze:

                        2 cups powdered sugar

                        2 tbsp melted butter

                        1/3 cup finely diced strawberries

                       ½ tsp vanilla extract

                       1 to 2 tbsp heavy cream

How to make Tasty Strawberry Bread

FIRST STEP:

Preheat the oven to 350*

In a medium bowl, stir together sugar, milk, oil, butter, egg and vanilla

SECOND STEP:

In a separate bowl combine flour baking powder and salt

Add the dry ingredients to the wet ingredients and stir until just combined

THIRD STEP:

In a small bowl toss together the flour with the strawberries

Gently fold the strawberries into the batter

FOURTH STEP:

Pour the batter into a greased loaf pan

Bake in a 350* oven for 50 to 55 minutes

FIFTH STEP:

Check for doneness by poking a toothpick in the center. If it comes out clean it is done.

Allow the bread to cool for 10 minutes, then turn it out onto a cooling rack until it is cooled completely

SIXTH STEP:

To make the glaze, combine the powdered sugar and the butter, the vanilla and the diced strawberries.

Mix until smooth

SEVENTH STEP:

Spread the glaze on top of the bread and serve
