The Cheesiest Cattle Drive Casserole

         This is quite similar to what cooks would whip up when cattle drives were taking place in the old west. Granted, they may or may not have had Bisquick, but I believe they likely made it all by hand. I have never been lucky enough to even witness a cattle drive, but I can only imagine the work that goes into one. By the end of the day, those girls and guys are probably as hungry as bears. This is the meal that will fill them up.

            That being said, this meal would be great for your son and his friends also. I am sure they can all eat like cowboys. I admit, at first, this recipe may look a little daunting, but it truly is not difficult at all!

There is the biscuit bottom that is there to soak up all the yummy sauce that comes through. Loaded with ground beef, that is spicy with taco flavor. A cheesy pepper sauce filled with diced tomatoes and green chilis.

This casserole is filling and warm for your tummy. I guess you could say comfort food out on the range. Even cowboys and cowgirls need good food. This casserole would taste great with an extra biscuit on the plate.

            Can I leave out some of the green chilis?

There is no mandatory amount of green chilis that need to be added. If you use rotel diced tomatoes with green chilis, you could leave out the other can of green chilis.

            Can I add more vegetables to the casserole?

You could add more or less, whatever you choose to add in or take out. This is sort of like a dump casserole.

            2 ½ cups Bisquick

            1 cup of water

            1 ½ pounds ground beef

            1 can rotel fire roasted tomatoes with green chilis

            4 ounce can of green chilis

            1 packet taco seasoning mix

            1 red pepper, diced

            1 onion, diced

`           ½ cup sour cream

            ½ cup mayonnaise

            ½ sour cream

            1 tsp garlic powder

            1 ¾ cup Cheddar Cheese, shredded

How to make The Cheesiest Cattle Drive Casserole

FIRST STEP:

Preheat the oven to 350*

Lightly spray a 9×13 baking dish

SECOND STEP:

In a skillet, place the ground beef, onions, and red pepper, cook until the ground beef is cooked thoroughly and the vegetables are tender

Stir in the taco seasoning, and the salt and pepper

THIRD STEP:

In a medium bowl, mix together the mayonnaise and the sour cream, along with the shredded cheese

In another bowl, mix the Bisquick with 1 cup of water, adding a little more as needed to get a soft dough.

FOURTH STEP:

Press the dough at the bottom of the sprayed baking pan and bake for 5 to 7 minutes, until lightly golden

Remove the crust from the oven and pour the meat and vegetables over the crust

FIFTH STEP:

Top with a layer of diced tomatoes

Spoon and spread the sour cream mixture over the tomatoes
