         This is for those who love the flavor of an egg roll, but do not want the egg roll wrapper or the grease from frying. I have been trying to make more foods that are lower in carbohydrates and fats. Considering that I do so much cooking, it is about time that I try to make these even healthier than I have been. This Egg Roll stir fry is one of these.

We love Chinese food in our house.   It turns out to be expensive if we order take out as much as we like. So, I have worked at replicating the recipes made by our favorite restaurants. This has actually worked well. Cutting back on the carbohydrates without anyone left hungry. Of course, with some of us, it is really hard to get past the meat, vegetables and potatoes. The older generation believed in that.

            I have also become one of those preppers! On the weekend, I will prepare a few meals ahead of time. That way, all I need to do is grab and reheat. This gives me the chance to continue creating healthier versions of our favorite foods.

When you make your favorite Chinese at home, you know what is in it, it tastes even fresher than watching them cook it at the restaurant and it is much more economical. Chinese does not have to cost an arm and a leg anymore. It really is easy to make at home.

If you have any left after dinner, put it into an airtight container and into the refrigerator for 4 days. You can place it into freezer safe bags and put it into the freezer for 4 months.

What do you need to make Unrolled Egg Roll Stir Fry

            1 ½ pounds lean ground meat(beef, sausage, chicken)

            ⅓ cup soy sauce

            1 cup chopped onion

            1 bag coleslaw cabbage, approximately 16 ounces

            ½ cup shredded carrots

            2 tsp ginger paste

            4 tsp minced garlic

            2 tbsp Sesame Oil

            Freshly chopped green onion

How to make Unrolled Egg Roll Stir Fry

FIRST STEP:

Add the half of the oil to a skillet and heat on medium high heat

Add the meat and onion to the skillet and cook until the meat is halfway cooked, crumbling the meat into small pieces

SECOND STEP:

At the halfway point, add in the shredded carrots

Add the cabbage to the skillet and cook until it begins to soften

THIRD STEP:

In a small bowl combine the soy sauce, ginger paste, minced garlic and the remaining sesame oil

Mix well to combine

FOURTH STEP:

Pour the sauce over the ingredients in the skillet and stir well to combine

Cook for another 3 to 5 minutes

FIFTH STEP:

Before serving, garnish with the chopped green onions

You can add more soy sauce to taste when the stir fry is done cooking.
