When the New Year begins, it seems that we all decide to get our health back on track. For many of us, this means making the Vegetable Detox Soup. The soup is actually really delicious.
I remember the first time I heard about it, all I could imagine was a pan of watered down broth, tasteless vegetables and being hungry for the entire time. Well, let me say right now, I was WRONG!
This soup has a tasty broth, it is loaded with flavorful vegetables and you can eat as much as you want! Is there any other meal that says you can have as much as you want?
Not that I know of! This is the best soup to start the year with if, like me, those sweets kept jumping to my hands and then into my mouth. This soup is comforting, delicious and really simple.

What vegetables should I use?
This soup has all the necessary vegetables that will help to clean the gunk and sugar out of your system. Plus you can add in vegetables if there is one you like that is not included in the recipe.
Can I add herbs?
Of course, herbs will not detract from the benefits of this soup. You can use Basil, Oregano or Parsley. There are others you could try also.
Should I avoid the carbs?
If you are detoxing, you probably want to avoid them. However, I make this soup for my family at least once a month. With the soup I will serve breadsticks or garlic cheese bread.
What do you need to make Vegetable Detox Soup
1 cup cauliflower florets
2 cups broccoli florets
½ yellow onion, chopped
½ cup celery, chopped
¼ cup carrots, diced
10 ounces diced tomatoes
3 cups chopped kale
1 tbsp Olive Oil
3 tsp garlic, minced
2 tsp ginger paste
1 tsp turmeric
1 tsp Thyme
Juice from ½ lemon
4 cups Chicken broth
Salt and pepper to taste
How to make Vegetable Detox Soup
FIRST STEP:
Add oil to a dutch oven over medium heat
Stir in the broccoli, cauliflower, onions, carrots, celery together in the oil

SECOND STEP:
Saute until the vegetables begin to soften
Mix in the garlic, ginger paste, turmeric, ground thyme and the salt and pepper to taste.

Pour in the diced tomatoes, with the juice, add in the chicken broth. Stir to combine

Cover and simmer for 45 minutes until the vegetables are softened
Stir in the chopped kale and simmer just until wilted.
