         You are probably thinking that this is not even possible. How can anyone have cheesecake on a diet? How can it be Skinny Points? Then your mind likely drifts to ‘This cheesecake probably does not even taste good!’ Cheesecake is a traditional dessert that most people enjoy. Today, many of us have to ignore or walk away from cheesecake so we can stick to a diet. Well, no more guys!

            Here is a cheesecake that is creamy, indulgent and well worth the short time it takes to make it. I have tried many cheesecakes that are specific for diets. I agree, after one bite, I usually do not eat anymore of it. There is just something that does not taste right to me. However, now I can once again enjoy the cheesecake that I love.

            You can still top this cheesecake with any fruit toppings you enjoy. Keep it low calorie so that you can still stick with the diet. Also, know that the graham cracker crust is optional with this recipe.

I suggest no crust, however, I did include the recipe I use when I include it with the cheesecake. If you choose to have the crust, look for a product that has no sugar if possible, gluten free also helps.

Wrap your cheesecake tightly in plastic wrap and keep it in the refrigerator for up to 5 days. You can also freeze cheesecake if you would like. Wrap it tightly in plastic wrap a couple of times, then use a layer of aluminum foil to cover it. Mark the date on the top and it can sit in the freezer for up to 6 months.

            3 cups plain Greek Yogurt

            1 box instant cheesecake pudding mix, sugar free

            3 tsp vanilla extract

            3 tbsp powdered sugar substitute, such as Swerve

            9 inch graham cracker crust, preferably homemade, with a sugar substitute

FIRST STEP:

Preheat your oven to 375*

In a mixing bowl, combine each of the ingredients, beating the eggs one at a time after you add them.

In a bowl, combine 2 sleeves of graham crackers, and 2 tbsp butter, (optional 2 tbsp Swerve sugar substitute)

Press the graham cracker mixture into the bottom of a 9 inch baking pan, going slightly up the sides also.
