White Chocolate Strawberry Cake

         This cake is not for the weak at heart! If, like me, you love white chocolate and strawberry, then this will easily become your new favorite cake or dessert. This cake comes out looking very pretty and could be used for special days such as Birthdays, Anniversaries, Groom Dinners or any event you would like. I made this with a vanilla flavored cake mix, but you could use white, yellow or even chocolate.

            As stated, this is not for the weak of heart. To get a cake this delicious does take a little work, but the outcome is well worth the effort. I also make time to freeze my cake layers.

The added moisture helps in the moistness of the final product. When I do this, I cool the cakes in the pans and while they are still slightly warm, I wrap the cake, pan and all with plastic wrap and then foil.

I place them in the freezer for a few hours. For many, decorating a cake that is still partially frozen, makes it much easier to handle also.

            Can I use a prepared box cake mix?

You certainly could. Make sure that you have enough to make the three layers needed.

            Can I use a different fruit?

Yes, I used strawberries because they taste perfect with white chocolate. You could try blueberries, cherry, apple or blackberry. Let me know how they taste.

            How do I store this cake?

Freeze the layers separately before decorating. This helps with the moisture content. After you have completed the cake, I would suggest keeping it covered and in the refrigerator.

What do you need to make White Chocolate Strawberry Cake

            1 cup butter, softened

            2 ⅔ cup cake flour

            3 tsp baking powder

            1 box jello mix, strawberry flavor

            4 large eggs

            1 cup milk

            2 tsp vanilla extract

            ½ cup strawberries, stem off and pureed

Icing:

            3 ½ cup powdered sugar

            4 ounces cream cheese, softened

            3 tbsp heavy cream

            12 ounces white chocolate chips

How to make White Chocolate Strawberry Cake

FIRST STEP:

Preheat the oven to 350*, place oven rack in the middle

In a large bowl combine 1 cup of softened butter, the strawberry jello mix and the sugar until they are well blended

SECOND STEP:

Add in the flour, eggs, vanilla, pureed strawberries, baking powder and the milk

Beat until smooth

THIRD STEP:

Divide evenly between two round cake pans that have been greased and floured

Bake for 30 to 35 minutes, until a toothpick comes out clean

FOURTH STEP:

Set the pans on a cooling rack, when the cakes are still slightly warm, wrap them in plastic wrap, (pan and all) then wrap with aluminum foil and place in the freezer for a few hours.

Take out of freezer and remove one layer from the pan, set it on a cake plate

FIFTH STEP:

In a saucepan, combine the white chocolate chips, cream cheese and the 3 tbsp of heavy cream

SIXTH STEP:

Stir continuously until the cream cheese and white chocolate chips are melted

Remove from the heat and slowly pour into a mixing bowl

Add in the powdered sugar, just until you achieve the consistency you would like. Continue adding a little at a time.

Place a layer of icing on the first layer of cake

Place the second layer of cake on top
