Whipped Cream Cheese Frosting on Strawberry Cake

         I am the type of person who cannot live with having strawberries at just certain times of the year. I love strawberries year round. So you can be sure that I have plenty of fresh frozen strawberries year round, in my freezer.

This cake can and does have many different versions. There are many different types of fruits used also. I am sticking with the Strawberry flavored cake first and foremost.

            Before you ask, yes, you can substitute another flavor for the strawberry. I only ask that you do at some point, give this one a try. If you choose to, you can double the recipe and turn this into a full sheet cake.

Use a rimmed cookie baking tray or jelly roll pan for the baking. 18x 26 roughly would be a full sheet. Be sure to double the frosting recipe also.

Frequently Asked Questions:

            Can I use margarine?

Butter always makes a cake taste better. Butter is not oily as margarine is. However, the choice is yours, I would not recommend that though.

            Do I have to use cream cheese?

I am not sure how you would obtain cream cheese frosting if you do not use it. If what you want is a non-cream cheese frosting. You can certainly use whichever flavor you would prefer. Maybe a buttercream frosting instead?

What do you need to make Whipped Cream Cheese Frosting on Strawberry Cake

            Cake:

                        1 cup butter, unsalted

                        2 eggs

                        2 cups granulated sugar

                        ½ tsp pure vanilla extract

                        2 tsp lemon juice

                        3 tbsp strawberry flavored gelatin

                        ¼ salt

                        ½ baking soda

                        1 cup buttermilk

                        2 ½ cups cake flour

How to make Whipped Cream Cheese Frosting on Strawberry Cake

FIRST STEP:

Cream butter and sugar together

Add eggs one at a time

Beat in vanilla and lemon juice

SECOND STEP:

In a separate bowl, add the flour, slat, baking soda and the gelatin

Add the flour to the butter mixture, a small amount at a time, alternating with the buttermilk, until all is mixed together

THIRD STEP:

Mix on low speed until the dry ingredients are all incorporated

Grease and flour the baking pan

FOURTH STEP:

Place parchment paper on the bottom and up the sides of the baking pan

Spray th parchment paper with a non stick spray

FIFTH STEP:

Pour the batter into the pan and smooth out

Bake for 30 to 35 minutes, until a toothpick comes out clean

SIXTH STEP:

Allow to cool in the pan for 15 minutes

Using the parchment paper, lift cake out and set on the wire rack to finish cooling

            1 pkg. 8 ounces cream cheese, softened

            ⅔ cup confectioner’s sugar

            ¾ cup diced fresh strawberries

            1 ½ cup heavy cream

            2 tbsp lemon juice

How to make Whipped Cream Cheese Frosting:

FIRST STEP:

Place the softened cream cheese in a bowl

Add ⅓ cup confectioners sugar

SECOND STEP:

Beat until smooth

Add diced strawberries and beat until just mixed

THIRD STEP:

In another bowl, beat the cream and the lemon juice until foamy

Slowly add the remaining ⅓ cup confectioner’s sugar and beat until stiff peaks form

FOURTH STEP:

Use a spatula to combine half of the cream mixture into the cream cheese mixture, using the spatula fold gently

FIFTH STEP:

Fold in the remaining mixture

Fill a piping bag and place dollops of frosting all over the top of the cake.
