What makes banana bread so good is the extra shot of love added by whoever makes the bread. Some of us add chocolate chips with the nuts, some add raisins or other dried fruit.             This recipe will give you a banana bread that is super moist, full of banana flavor, raisins and walnuts. There is a secret to the best banana bread, many of us do not wait long enough for the bananas to ripen more than normal.

In order to get the best banana bread, you need to wait for your bananas to become that ugly brown and the banana to be mushy. Yes, that is the only real secret.

            One tip that I need to share, when using a regular loaf pan, glass or metal you do not want to grease the sides. You should only grease the sides of a loaf pan if you are using a non stick pan, Then you grease bottom and sides and then dust with flour.

You need to wrap the bread tightly with plastic wrap. Do not stop there though, once you have it wrapped in plastic, slip it into a large freezer bag that seals shut.

Certainly, it freezes nicely if it is wrapped tightly in plastic, then foil and then into an airtight freezer safe container or bag.

Of course, substitute honey for the sugar, and use whole wheat, almond or coconut flour.

            ¾ cup sugar

            ¾ tsp baking soda

            ½ tsp salt

            2 cups all purpose flour

            3 over ripe bananas, (dark, mushy and soft), mashed

            2 large eggs

            ¼ cup buttermilk

            6 tbsp butter, softened

            1 tsp vanilla

            1 cup raisins

            1 cup chocolate chips, optional

            1 cup walnuts, chopped

How to make Best Banana Bread

FIRST STEP:

Preheat the oven to 350*

Grease the bottom and sides of a loaf pan

SECOND STEP:

In a large bowl, mix together the flour, sugar, salt and baking soda

In a medium mixing bowl, mash the bananas

Add the buttermilk, eggs, vanilla and butter to the mashed bananas

Stir to combine really well

FOURTH STEP:

Slowly add the flour mixture to the banana mixture. Do not over stir. Fold until just combined

Pour into a prepared loaf pan

FIFTH STEP:

Bake for 55 minutes or until a toothpick inserted in the center comes out clean

Cool in the pan for 5 minutes, then turn out onto a cooling rack

Serve when cool
