Cherry Cheesecake Egg Roll recipe

            How did we ever come up with some of these desserts? I have no clue! This one, however, I do know! I have a huge crush on anything Chinese, as far as food. So as I am sitting in my favorite Chinese restaurant, wishing that I had a piece of cheesecake after over filling my stomach, it hit me! Why not make cheesecake and put it in an egg roll wrapper?

            Of course I had to do more than just simple cheesecake. And, remember that this is not your typical egg roll! This is a delicious twist on egg rolls, they are not Chinese cuisine, but they are also similar to cheese wontons. These are seriously a good cross between cheesecake and cheese wontons.

            I will tell you now, I have not tried to make these in the air fryer as of yet. If you do, let us know how they turn out please. I remind you again, these are dangerously addicting.

            Can I make these ahead?

You can make them ahead and freeze them. Do not bake them before you put them in the freezer. Wrap them tightly in plastic wrap and then a layer of aluminum foil, or you can keep them in an airtight container.

            Can I store these in the refrigerator?

These eggrolls will remain good if kept in the refrigerator for up to 4 days. Be sure to wrap them tightly or keep them in an airtight container.

            Can I use different fruit pie filling?

You could use blueberry, raspberry, strawberry or any of your favorite flavors. Nothing in the recipe will need to be changed.

What do you need to make Cherry Cheesecake Egg Roll recipe

Oil for frying

4 ounces cream cheese, softened

1 tsp lemon rind, lemon zest

3 tbsp granulated sugar

½ tsp lemon juice

1 can cherry pie filling

8 egg roll wrappers (I used 6×6 size)

How to make Cherry Cheesecake Egg Roll recipe

FIRST STEP:

In a mixing bowl combine the cream cheese, lemon zest, lemon juice and the granulated sugar

Beat until smooth

SECOND STEP:

Lay your egg roll wrappers on a clean surface in a diamond pattern

THIRD STEP:

Spoon some of the cream cheese mixture in the center

Spoon some of the cherry pie filling across the cream cheese mix

Use water to wet the edges of the egg roll wrapper

FOURTH STEP:

Roll up the egg roll ensuring that the edges seal

Let the rolls sit to the side for 3 to 4 minutes so that the water dries and the edges seal

FIFTH STEP:

Preheat the oil in the pan to 350*

Fry the egg rolls in small batches, until brown and crispy.

Serve warm

Note:

There is a way that makes it easier to put the cream cheese in a row on the egg roll wrapper. When you are finished making the cream cheese mix, spoon it into a baggie. Then cut the corner of the baggie off and squeeze a row of the mixture in the center. The you just place the cherries from the pie filling over the top of the cream cheese filling, and proceed to the rolling.
