Enchiladas are loved by millions of people worldwide. With this recipe, we turn an all time favorite into a creamy, rich casserole. It is still filled with all your favorites like chicken, cheese, sour cream and green chilis.
Although this is an enchilada dish, there is no rolling of tortillas, for that reason I will call it a casserole. Instead of rolling all those tortillas, we are going to layer them in a baking dish, with all those other yummy enchilada ingredients. It makes it simpler while still giving you all the taste. We all know that I like easy dinner recipes, and this one fits that perfectly!
Enchiladas have everything you need in a meal, except dessert of course. There is meat, grain, dairy and you can add bell peppers and cheese if you choose. I also added onion and diced tomato to ours. One of the favorites that I keep on the side as topping is black olives.
My hubby loves green olives too. The olives just add a kick to the other flavors when you take a bite. The point is, if there are things your family likes, that are not included in the recipe, tweak the recipe or have those items in bowls on the table so everyone can make their casserole perfect for them.

Can I use a different cheese?
The Fiesta blend tastes the best, in my opinion, however, you could use nacho, white American or Cheddar. There are any number of flavors of cheese that can be used.
What do you need to make Sour Cream Chicken Enchilada Casserole
4 cups chicken, cooked and shredded
½ cup sour cream
1 can cream of chicken condensed soup
½ cup milk
1 can chopped green chilis
2 cups Mexican Fiesta blend shredded cheese
1 tsp garlic powder
2 tsp onion powder
Salt and pepper to taste
12 corn tortillas
How to make Sour Cream Chicken Enchilada Casserole
FIRST STEP:
Preheat the oven to 350*
Spray the bottom of a 9 x 13 baking dish with non stick spray
SECOND STEP:
Layer 6 tortillas at the bottom of the baking dish
In a mixing bowl, combine the following: soup mix, milk, sour cream, canned green chilis, salt and pepper, garlic and onion powder

Take half of the shredded chicken and place evenly over the layer of tortillas
Scoop half of the liquid mixture over the chicken

Sprinkle half o the shredded cheese over the top
Repeat steps 2 through 6
FIFTH STEP:
Bake for 40 minutes and let rest on the counter for when done baking
