Yes, a delicious and warm breakfast that is a breeze to make, tastes wonderful and makes the family cheerful.  The good thing is that you could get this put together the night before so that all you have to do is bake it in the morning. If the morning passes too quickly, this is a great brunch food also.

Filled with ham, tater tots and bacon, this casserole also has some red and green peppers mixed in. The flavors are so perfectly mixed you will be amazed.

            This is another great versatile casserole. You can make it with the ham and bacon, change it up with sausage instead. Better yet, use all three for intense flavor. This recipe will make a large batch that feeds many people.

However, it will sit well in the refrigerator for three to four days. You could put it in the freezer using single serve containers and it will last for 2 to 3 months.

            I am not a fan of bacon, can I leave it out?

You could leave out the bacon, you can switch it up for turkey bacon if you like. You could swap out all the meat and use just sausage.

            Can I make it the night before?

Yes, but if you are unable to cook it the next day, you need to wrap it in plastic wrap and then in aluminum foil and stick it in the freezer.

            How do I reheat this?

Let the casserole thaw overnight in the refrigerator and then heat as you normally would in the microwave.

            1 tsp mustard powder

            ½ tsp salt

            4 large eggs beaten well

            2 cups whole milk

            1 pound ground sausage

            6 slices bread, (white, wheat) cut into cubes

            1 cup shredded cheddar cheese

How to make Christmas Breakfast Casserole

FIRST STEP:

Brown the sausage in a skillet

Drain the grease from the sausage

SECOND STEP:

In a medium bowl, mix the milk, mustard powder, salt and the eggs

Add in the cooked sausage, bread cubes and cheese

THIRD STEP:

Grease a 9 x 13 baking dish

Pour the mixture into the baking dish

FOURTH STEP:

Cover tightly and let chill in the refrigerator for 8 hours or for overnight

Preheat the oven to 350*

FIFTH STEP:

Cover the baking dish with aluminum foil

Bake for 45 to 60 minutes

SIXTH STEP:

Uncover and reduce the temperature to 325*

Bake for an additional 30 minutes or until set

Cut into squares and serve

Tips

This is a complete meal in itself. You could serve it with a cup of hot chocolate and maybe a donut hole or two for sweetness. If there is any left, place it in single serve containers so you can make it throughout the week, for school mornings, work days or lunch when you are home alone. Do not forget the glass of orange juice to go with it.
