            What types of foods can I use this Cranberry Pecan Cheese Ball with?

I always set out an assortment of crackers for guests. I make a variety of whole wheat, butter, and vegetable flavored. I also slice up baguettes and focaccia bread. You can also use cut up vegetables for a tasty treat.

            Can I use a low fat or full fat cream cheese?

Either one will work in this recipe, I prefer the full fat. I generally make this Cheese Ball around the Holidays, and what better time than that to use full flavor, full fat? Diets happen at the start of the New Year, not over the Holidays.

            Should I use fresh cranberries or freeze dried?

Dried cranberries have always been my favorite in this recipe. They have a sweetness about them when they are dried that just does not match up when using fresh.

            How should this Cheese Ball be stored?

This can be made in advance, the day before but I would not make it more than 2 days in advance. Once made, wrap it tightly with plastic wrap and set it on a plate in the refrigerator. When ready to serve simply unwrap it and place it on a decorative plate, surrounded by crackers or your choice of breads or vegetables.

What do you need to make Cranberry with Pecan Cheese Ball

            1 ½ cups Sharp Cheddar, shredded

            8 ounces Cream Cheese, softened

            ¼ cup Green Onions, chopped

            ⅓ cup Cranberries, dried

            ⅓ cup Pecans, chopped, PLUS more for outer covering

            Crackers, breads or vegetables to serve

How to make Cranberry with Pecan Cheese Ball

FIRST STEP:

Soften the Cream Cheese to room temp. This will make it easier during the mixing process.

Once softened, combine the Cream Cheese, Green Onions, Pecans and dried Cranberries in a large bowl

SECOND STEP:

Stir to blend well and mix thoroughly to ensure flavors are spread throughout the Cheese

Shape into a ball and roll into the additional pecans(or nuts of your choice)

THIRD STEP:

Carefully wrap with plastic being certain that the entire ball is covered to prevent any drying of the Cheese.

Place into the refrigerator until just before serving
