I don’t think it really matters, I use sliced mushrooms, or button mushrooms. You could even use canned mushrooms, as long as you drain them well.

I use boneless and skinless chicken breasts. I do know some who actually use Rotisserie Chicken that they shred and add to a sauce for this. However, the look of a chicken breast with mushrooms and the cheese sauce is phenomenal.

Once the food has cooled to room temperature, place it in an airtight container and then into the refrigerator. It will remain good for 3 days.

            Can I freeze the leftovers?

You can! The food must be cooled to room temperature, the food placed into a freezer safe container and placed into the freezer. It can remain in the freezer for up to 3 months.

            What sides can I serve this dish with?

You could serve the Smothered Chicken on a bed of steamed rice, or you could make homemade Mashed potatoes. This is also a great meal in itself.

What do you need to make Creamed Spinach with Smothered Chicken

            4 Chicken Breasts, Boneless and skinless

            1 large Onion, sliced

            8 ounces Mushrooms, sliced

            1 pkt Italian Salad dressing mix

            8 ounces Cream Cheese, softened to room temperature

            8 ounces Baby Spinach, fresh

            1 ½ cups Mozzarella and Provolone Blended Cheese, shredded

            2 tbsp Olive Oil

            Salt and pepper to taste, if desired

How to make Creamed Spinach with Smothered Chicken

FIRST STEP:

Preheat the oven to 350*

Add Olive Oil to a skillet and heat over medium heat

Saute the onions until softened and caramelized

Stir the mushrooms into the skillet and saute until soft

SECOND STEP:

In a bowl beat the cream cheese and the Italian Salad Dressing mix

Grease a baking dish liberally

Place the chicken breasts in the skillet

Top each breast with an equal amount of the cream cheese mixture

Add the spinach in the skillet with the onions and mushrooms and saute until spinach is wilted

Season the chicken breast and Cream Cheese with Salt and pepper if desired

Spoon the Spinach, onion and mushroom mixture over the cream cheese mixture

Sprinkle the shredded Cheese over the top of the Spinach mixture

THIRD STEP:

Bake for 30 minutes
