            Which cut of chicken should I use?

Well, this recipe calls for canned chicken breast. However, I believe you could shred  leftover chicken if you have it and use it. It may be more economical than running to the store. I have actually used leftover thighs and breasts many times for this recipe and the fritters come out delicious every time.

            Do I have to use Dijon mustard in the recipe?

You could use plain yellow mustard if you would prefer, or if you do not have Dijon.

            How do I store this dish?

Be sure that the fritters are cooled completely and then place them into an airtight container and into the refrigerator. They will last for 4 days.

            Can I freeze the fritters?

Yes, you certainly can! Again, be sure they have cooled completely after cooking. Wrap them tightly in foil or place them into an airtight, freezer safe container. You can leave them in the freezer for up to 3 months.

What do you need to make Crispy Style Chicken Fritters

            25 ounce can of Chicken breast, drained completely

            1 tsp Dijon mustard

            ¼ cup Breadcrumbs, I use an Italian style

            ⅛ tsp Thyme, use dried

            ¼ tsp Garlic powder

            ¼ tsp Onion powder

            1 large egg, beaten

            Salt and pepper to taste, if desired

            Oil for frying

How to make Crispy Style Chicken Fritters

FIRST STEP:

In a large bowl combine the diced chicken, breadcrumbs, dijon mustard, thyme, garlic powder, onion powder, salt and pepper and the egg

Blend together completely

SECOND STEP:

Pour about ½ inch of oil into a skillet and heat on medium high heat

Form the chicken mixture into 6 patties and carefully place them in the heated oil in the skillet

Fry until they are golden brown on both sides

Set on a paper towel lined plate to drain excess oil
