Easiest Key Lime Pie Ever

         This is the easiest recipe I have ever come across for a pie. This one is tart and sweet, super easy to make and has a delightful graham cracker crust. You may have noticed that I do not list very many pies. When I do, you can be sure that it is one that I really love. Since you all know me so well, you would also admit that I tweak a lot of my recipes to make them easier for all of us to create good food for our families.

            For instance, the key lime pie. I did not squeeze a bunch of limes for this. I admit it, I used ‘Key Lime Juice’. I will not stop you if you prefer to do the squeezing yourself. The key lime is what makes this pie so wonderful.

The crust is another confession. I cheated on this also. I used an already prepared pie crust. Like you, I do not have tons of time each day.

If you prefer the homemade crust, go for it! You could use any type of cookie crust also.

            Can I use cookie crust instead of graham crackers?

Any type of cookie would work for the crust. You want to pulse it a few times in the processor to get them into crumbs.

            What is the difference between Key limes and regular lime?

The Key limes are less acidic than the regular limes. They also have a better aroma than the regular limes.

            Can I use regular Limes?

When I cannot find Key limes, I order from Amazon. You could also use Persian or Kaffir limes.

            Do I need to refrigerate the pie?

Your key lime pie will be good in the fridge for 3 to 4 days. I do suggest that you do not leave the pie out on the table for more than one hour.

            Can I make the crust homemade style?

Absolutely, I love homemade crusts. For this recipe, I just wanted to make it easier for us to make this phenomenal dessert for our family.

            Can I use more lime zest, or will that be too much?

You could definitely use more. The 1 tbsp will be perfect to mix in the pie filling. You can zest a little more to sprinkle on the top of the pie before serving.

What do you need to make Easiest Key Lime Pie Ever

            9 inch pie crust, pastry style or graham cracker

            1 tbsp grated lime zest

            3 cups Sweetened condensed milk

            ½ cup sour cream

            ¾ cup Key Lime juice

How to make Easiest Key Lime Pie Ever

FIRST STEP:

Preheat the oven to 350*

In a large bowl, mix the lime juice, lime zest, sweetened condensed milk and the sour cream

Mix well

SECOND STEP:

Pour this mixture into the prepared pie crust

Place in a preheated oven for 5 to 8 minutes.

The pie is done when tiny bubbles begin to pop on the surface. Do not leave it in the oven longer.

THIRD STEP:

Chill the pie for at least three hours in the refrigerator.

Garnish with dollops of whipped topping with a slice of lime in each dollop.
