Loaded Steak Quesadillas

            This is an amazing quesadilla recipe. It is loaded with all things you love to have in a quesadilla. This is not a normal quesadilla by any means! It is loaded with sirloin steak, avocado, beans, corn, tomatoes and Mexican cheese. Of course, I may have forgotten some important items, but you can add those in.

             I did not even marinate the sirloin for this recipe. I used the best Mexican seasoning and spices that I could find. I wanted this to be one of those meals that you can run to when you have a busy night. This will take 30 minutes and you are good to go. There is nothing better midweek than a quick meal, one that everybody loves.

            Take it from me, serve this with a big scoop of sour cream, a side of guacamole and maybe throw in a dinner salad and a large Margarita on the table to enjoy along with this deliciousness. Of course virgin Margaritas for the kids.

            It isn’t always about how easy it is to make for dinner, it is also about the ease of clean up with this meal. I have thought of all of it.

What size tortillas do you recommend?

I recommend using the 10 to 12 inch tortillas. That size would not only make the perfect size, they will also keep you full for a while after.

Do we have to use black beans?

The black beans are not mandatory, but they make these quesadillas taste more authentic.

Why not marinate the sirloin?

I tweaked this recipe to be a quick and easy meal. Using the Mexican seasoning and spices, make up ten fold for the lack of marinating. Of course, if you want, you can still marinate it.

What do you need to make Loaded Steak Quesadillas

            1 pound Sirloin Steak

            ¼ tsp salt

            1 pinch cayenne pepper

            ¼ tsp garlic powder   

            ¼ tsp onion powder

            ¼ tsp cumin

            ½ tsp paprika

            ¼ tsp Mexican Oregano, ground

            1 tsp Ancho Chili powder

Quesadillas

4 large 10 to 12 inch tortillas

2 cups Mexican Cheese

½ cherry tomatoes, sliced thin

½ canned black beans, drained

½ cup roasted corn drained

½ avocado diced into chunks

Cilantro and Lime wedges for garnishing

How to make Loaded Steak Quesadillas

FIRST STEP:

Preheat the oven to 425*

Lay a sheet of Parchment on a baking sheet

SECOND STEP:

In a small bowl, mix the salt with the other spices

Generously rub the steak with the spice mix on both sides

THIRD STEP:

Heat a skillet on medium high heat, add 2 tbsp of Olive Oil

Sear the steak on each side, no more than 3 minutes per side

FOURTH STEP:

Remove the steak from the heat and let rest for 5 minutes

Place two tortillas on the parchment lined baking sheet

FIFTH STEP:

Sprinkle ½ cup of cheese on each tortilla

Top with the corn, black beans, tomatoes and avocado

Slice the steak thin, against the grain

SIXTH STEP:

Layer the steak slices on each tortilla

Sprinkle the remaining cheese on the meat and place a tortilla on top

SEVENTH STEP:

Bake 6 to 8 minutes, until the cheese is melted

Remove from the oven and slice into quarters or eighths

Sprinkle with cilantro
