            Could I add in additional vegetables?

I always do this. I chop broccoli, cauliflower, carrots into a crumb type of mixture and add this to the meatloaf. When you crumb the vegetables using a blender or food processor, you will mix it in with the meat and no one will know.

            Can I use a different type of cheese?

You could, I find Cheddar to be the best in this recipe. However, you could use a three cheese blend, or Swiss or Mozzarella. There are many varieties you could use.

What do you need to make Meatloaf with Cheesy Potatoes

            1 ½ lbs Ground Beef

            1 tbsp Olive Oil

            3 tsp Garlic, freshly minced

            1 yellow onion, diced

            ¼ cup Tomato Sauce

            ¾ cup bread crumbs

            1 large egg

            ¼ cup BBQ sauce

            ½ cup pease, frozen

            ¼ cup Parsley, freshly chopped

Potatoes:

            1 ½ lbs potatoes, peeled and chunked

            4 tbsp butter

            ¼ cup Heavy whipping cream

            1 cup Cheddar Cheese

            Salt and pepper to taste

How to make Meatloaf with Cheesy Potatoes

FIRST STEP:

Preheat the oven to 400*

Heat the Oil in a skillet over medium high heat

Add onions to the skillet and saute until tender

Stir in the garlic and saute for another 30 seconds

Add the cooled onion, garlic mixture to the ground beef and remaining ingredients for the meatloaf, and knead with your hands to combine

Form the meat into a loaf and place into a casserole dish

SECOND STEP:

Bake for 30 minutes

While the meat is cooking, boil the potatoes until soft

Drain the potatoes, combine with heavy cream and butter, salt and pepper

THIRD STEP:

Top the meatloaf with the mashed potatoes and sprinkle with the Cheddar Cheese

Bake for an additional 15 minutes
