Mozzarella Stuffed Meatballs

If your kids are like mine, meatloaf is not one of their favorite meals. I do not understand that. Meatloaf today is so much tastier than it was when I was growing up.

Back then, Mom would throw leftovers in a bowl, toss in an egg, some oatmeal and salt and pepper. It would bake and then come out looking like a whole week’s worth of dinner in one dish.

Today, meatloaf is savory, has wonderful ingredients and actually looks tasty. This recipe is one to always remember.

Stuffed meatballs can be such a pleasant surprise when served with Spaghetti or just with mashed potatoes. Also, when you use this recipe, you are making a dish that is KETO approved, and low in carbs.

            Can I use a different type of cheese?

You could use any type of cheese you would like. I made this with mozzarella so that it was kid friendly and I knew that they would eat it. Cheddar, Provolone or any other gourmet cheese will make this meal special.

            Can I freeze these?

Yes! Once they have cooled off completely, place them in an airtight container and then into the freezer for up to 4 months.

            How do I store these?

These should be placed into a ziploc bag or another airtight container and then into the refrigerator. They will last for up to 4 days in the refrigerator.

            Can I use the leftover meatballs for a sub sandwich?

These would make an excellent sub sandwich. Top with a small amount of marinara and sliced cheese and there you have another meal.

What do you need to make Mozzarella Stuffed Meatballs

            1 pound lean ground pork

            ½ pound lean ground beef

            1 tbsp fresh Italian seasoning

            1 egg

            1 tbsp fresh chopped parsley

            Salt and pepper to taste

            4 Mozzarella Cheese Sticks, cut into thirds

Sauce:

            14 ounce can crushed tomatoes

            ½ small yellow onion, chopped fine

            1 clove garlic, freshly minced

            1 tbsp parsley

            Salt and pepper to taste

How to make Mozzarella Stuffed Meatballs

FIRST STEP:

Sauce first, place some Olive oil in a skillet

Add in chopped onion and saute for 5 minutes, until the onions are soft and translucent

Add the minced garlic and the can of chopped tomatoes

Stir in the parsley and the salt and pepper

Simmer on low for 20 minutes

SECOND STEP:

Preheat the oven to 400*Line a baking tray with parchment paper

In a bowl combine the pork and beef, the egg, and the seasonings

Mix together completely

THIRD STEP:

Grab a golf ball sized amount of meat mixture and roll into a ball

Place one piece of the cut mozzarella cheese stick into the center

Roll the meat around and be sure to seal so the cheese does not seep out when cooking

FOURTH STEP:

Continue until all the meat is rolled and cheese in the center of each.

Place the baking tray into the oven and bake for 20 minutes, until the meat is cooked through

Place the fully cooked meatballs into the marinara sauce and simmer for 20 minutes, stirring twice throughout.
