Oreo Crust Mini Cheesecake Bites

What if I tell you I have a lighter version of cheesecake that is quick and super easy to make? Yep, me too…Hurry up and get to the point…Right?? Although, admittedly, I am not a fan of cookies, ugh… that is hard to admit! I would prefer cakes, brownies or even pies. Cheesecake, however, will always be number one on my list of yummy treats! This version has fewer calories, built in portion control and is simple to make.

I dutifully picked up the first ever package of Oreo cookies, for me, it was the first package I had ever bought. I placed them in the pantry until I could take the time to make this recipe the next day. Oddly, when I grabbed the package out of my pantry, it had become incredibly lighter overnight. Thanks to my boys, I had to go purchase another package of cookies. I was smart, I grabbed two, hoping they would leave one alone.

Here comes the easy part of the recipe. All you have to do is place an oreo at the bottom of a muffin paper in the muffin tin. Then you fill it with cheesecake mix and set it in the refrigerator to set. Now, that makes for an easy and fast dessert. AND, less calories to ingest, but all the flavor!

Suggestions:

Let the Cream Cheese, eggs and sour cream come to room temperature before mixing. This will give you a completely smooth filling.

Do not over beat the eggs. I like to light whip with a fork before I add to the other ingredients, then I just mix until combined.

To prevent an overcooked taste to the cookie, it is best to bake these at a low temp in the oven.

How do I store the Mini Cheesecake Bites?

Since it is cheesecake, it cannot be left at room temperature. These can be stored in a tightly closed container in the refrigerator for up to 5 days.

Can I freeze these Cheesecake Bites?

Once they have cooled completely, you can wrap them individually with plastic wrap and then place inside a freezer safe ziploc bag. They will last for 3 months in the freezer. Let thaw in the refrigerator overnight when ready to serve.

Can I substitute yogurt in this recipe?

Plain greek yogurt may be substituted for the sour cream.

How do I prevent the cheesecake from getting cracks?

You keep the oven temp low at 325* when baking. Also, be sure none of the oreo cookies begin to rise to the surface. This will also cause cracking in the cheesecake. Gently push them back down using a toothpick.

¼ cup Truvia (½ cup regular sugar)

2 eggs

½ tsp vanilla

FIRST STEP: 

Preheat the oven to 325*

Line each muffin cup with a paper and place an Oreo at the bottom of each cup

SECOND STEP: 

In a mixing bowl combine the cream cheese, greek yogurt and sugar and beat until combined

One at a time, add an egg and mix thoroughly, repeat with the second egg.

Using a cookie scoop or an ice cream scoop, place one scoopful of batter on top of each Oreo cookie

FOURTH STEP: 

Place in the oven and bake for 20 minutes. Be sure to check if the cookie is rising to top and push down if it is.

Set aside and let cool completely

Gently remove muffin liner and enjoy!
