Strawberry Cheesecake Shortcake

            Who would have thought that you could turn strawberry shortcake into a cheesecake dessert? This is not only a very pretty dessert to look at, but it is delicious to eat also. There is a layer of cake, a layer of cheesecake and a topping of crushed shortbread cookies. Top each piece with a dollop of whipping cream and a strawberry slice and you basically have the tried and true Strawberry Shortcake, with a twist.

            Strawberry Shortcake has been commonplace in homes across America for over a century. Cheesecake is one of those desserts that is hard to say no to, so when given an opportunity to help celebrate a company in the strawberry business, I knew what I had to try for them. I was pleased with the way it turned out! Better yet, so were they!!

            This is a dessert that no one will expect at first glance. They will likely believe it is just another cheesecake. They will be pleasantly surprised when they taste this one.

If I am attending a potluck or family reunion or neighborhood party, I always bring two of these. They go just that fast!

            Can I store this in the freezer?

Most of the time I would say it would be okay to freeze. I do not recommend freezing this cake. The texture is not going to be the same when it thaws.

            How long can I store this in the refrigerator?

Cover the cake with plastic wrap or keep in a tightly closed container and store in the refrigerator for up to 3 days.

            Do I need to make a shortcake?

No, that is why this is a gem of a dessert! You can buy shortbread cookies and crush them to use as a crust.

            Can I use a different fruit and fruit spread?

If you choose to do so, then go for it. You could try raspberries, blueberries, peaches or even blackberries.

            Can I use a graham cracker crust?

You can, however, you will not have that wonderful shortcake flavor in this dessert.

What do you need to make Strawberry Cheesecake Shortcake

            5 ounces or more of crushed shortbread cookies

            2 tbsp melted butter

            24 ounces cream cheese

            1 tbsp vanilla bean paste

            12 ounces sour cream

            2 cups heavy whipping cream

            1 cup confectioner’s sugar

            10 of fruit spread, (Smuckers Simply Fruit)

            1 pint whole strawberries

How to make Strawberry Cheesecake Shortcake

FIRST STEP:

Crush the shortbread cookies and mix with melted butter

Press the mix onto the bottom of a springform cake pan

SECOND STEP:

Slice some of the strawberries and line them in an upright position along the sides on top of the crust.

Blend the cream cheese, heavy whipping cream, vanilla bean paste and half of the confectioner’s sugar

THIRD STEP:

In another bowl beat the sour cream with the other half of the confectioner’s sugar.

In the springform pan, spread a layer of the cheesecake mixture, a layer of fruit spread, sliced strawberries and the reserved cookie crumbs

FOURTH STEP:

Spread the whipped sour cream as a top layer

Sprinkle some additional cookie crumbs as a garnish.
