French Toast Rolls with Strawberries

            I can’t help it, breakfast is one of my favorite meals. I absolutely love the wide choice of options. This weekend, I needed something that was quick and easy for the family breakfast. Without too much detail, I played nurse all weekend for a child with a bad tummy and hubby had food poisoning.

After the full weekend, I told the husband that he may need to cancel his golf game. Surprisingly, he was healthy enough to go golfing.

            I, on the other hand, felt like I was down for the count! He made sure to tell me that it is not so bad being sick, that I could handle it. Why are men like that sometimes? Anyway, I did manage to get things done and still make breakfast for them.

This is a fun recipe that we all enjoy. I love to make these when my mom comes to visit, or for the kid’s birthdays. They look fancy and taste yummy.

Which bread should I use?

I used plain white sandwich bread. You could use wheat, or rye if you wanted. Just be sure it is a type that tastes good with fruit.

Can I use a different fruit?

You could swap out the strawberries with blueberries or raspberries or even use peaches. I have also made this using jams, not jellies. To use jam, I use 1 tbsp of chosen jam spread on top of the cream cheese, then proceed to roll up each slice.

How do I store these?

These are truly best if eaten fresh, however, you can store them for two days in an airtight container in your refrigerator. These can be stored in the freezer for up to 3 months. Wrap the rolls in plastic wrap, then wrap them with aluminum foil. Then place it into a freezer bag.

You can reheat these using the microwave. 30 seconds is enough to heat up the entire roll, if it still feels chilled, add an additional 5 to 10 seconds.

How to make French Toast Rolls with Strawberries

FIRST STEP:

Wash the strawberries and remove the stem.

Roughly chop the berries

SECOND STEP:

In a bowl, soften the cream cheese using the microwave for 10 seconds

Stir in the powdered sugar, mixing well

THIRD STEP:

Trim the crust off the bread and flatten the bread with a rolling pin

Spread about 1 tsp of cream cheese mix along one edge of the bread

FOURTH STEP:

Lay a layer of chopped strawberries on the cream cheese

Very gently roll the bread up starting with the side that has the cream cheese and strawberries

FIFTH STEP:

In a shallow bowl, mix the eggs, milk, sugar and cinnamon( I generally add 1 tsp vanilla)

Carefully dip each bread roll into the egg mix

Place each roll seam side down in the pan

Let each side brown and roll ¼ inch until the entire roll has been browned
