Taco Oven Bake

            Whether it is Taco Tuesday, Mexican night or International Food choice, these tacos are the best recipe I have EVER had. They can be made with either ground beef or chicken, maybe both for a night. They are sure to please everyone. You can easily double or triple the recipe for freezing.

            When you are looking for an appetizer for New Year’s Eve, Holiday parties, grill outs, or even work parties, get yourself some mini taco shells and make up a couple of pans full to bring. This recipe is great to get the kids together and have them help. It is easy enough that they could do it themselves.

            Everyone loves tacos, we all love to eat our tacos in different fashion, with different toppings. This recipe could also be used as a nacho bake taco dish. Crumble the shells into the bottom of the cake pan, top with cheese and then a layer of the meat.

Repeat with another layer of the cheese. Remember that using chicken also works well in this recipe.

Is it hard to freeze and reheat these?

You can take these out of the freezer and heat for three to five minutes in the air fryer. Otherwise, leave them sit in the refrigerator overnight to thaw and then reheat them in the oven.

Can I use different meat?

You can use ground beef, chicken or even shredded beef. Whatever type of meat you like in your tacos will work in this recipe.

Do I put all the toppings on before baking?

No, the shells will have cheese, meat and then more cheese. The toppings are placed on after they have been baked.

The suggested side dish to serve with these delicious tacos is Mexican or Spanish rice. It makes a perfect compliment to the tacos.

You could also serve dinner with a dinner salad and Margaritas on the side.  For a change, try using white queso instead of mexican or fiesta blend. Nacho cheese is a great substitution also.

1 dozen hard shell taco shells

1 ½ ground beef, browned and drained of fat

1 can rotel, undrained

1 medium onion chopped

1 packet pouch or packet of Taco seasoning

2 cups mexican or Fiesta blend cheese, shredded

Toppings:

Shredded lettuce

Diced tomatoes

Diced onions

 Salsa

Pico de Gallo

Guacamole

Sour cream

Green olives

Black olives

How to make Taco Oven Bake

FIRST STEP:

Preheat the oven to 400*

Saute the meat and onion together in a skillet until cooked thoroughly and onions have softened

SECOND STEP:

Drain fat from the meat and place meat back into the skillet

Add the taco seasoning and the can of undrained Rotel 

Stir to mix well

THIRD STEP:

Cook until the liquid is absorbed

Line the shells in a standing position in a 9 x 13 cake pan

FOURTH STEP:

Sprinkle a layer of cheese into the bottom of each shell

Place a layer of taco meat over the cheese

SIXTH STEP:

Add another layer of cheese on top of the taco meat

Bake for 15 minutes

SEVENTH STEP:

Remove from oven

Allow the family to top and garnish with their choice of toppings.
