Turkey Easy Meatloaf Recipe

         This is another one of those dishes I would steal to take back to the dorm with me during my college days. There was never enough to go around between my friends and I.

I have shown you all this recipe before, but since it is such a favorite, it does not hurt to give it to you again. This meatloaf is so darn tender on the inside, and moist, it is truly unbelievable.

            This is one of those meals that is great to prepare ahead of time. It stores well in the refrigerator and in the freezer.  You can keep the raw mix in the refrigerator for 24 hours before baking it.

Also, the original recipe called for a variety of mushrooms. You can still add them, but I have left them out for a while.

            I like mushrooms, can I add them back in?

Of course you can! Add in a variety of them, such as cremini, portobello and shiitake. This will up the flavor a few notches.

            Can I double the recipe?

Yes, with no problems! Just go down the list and double each ingredient.

            Can I make this gluten free?

If you leave out the breadcrumbs, this will qualify as a gluten free food.

            Do I need to add the eggs?

Eggs are one of the ingredients that help this recipe to retain the moisture it does.  However, you can remove them completely or use an artificial egg product.

What do you need to make Turkey Easy Meatloaf Recipe

            ¾ cup Italian breadcrumbs

            2 pounds ground Turkey

            1 tbsp olive oil

            2 tbsp dried and minced onion

            1 tbsp minced garlic

            1 ¼ tsp salt

            ¾ tsp freshly ground black pepper

            ¼ cup nonfat milk

            2 large eggs

            1 ½ tbsp Worcestershire sauce

            ½ tsp Italian seasoning

            ½ tsp cumin

            1 tsp Thyme

Sauce:

            ½ tsp Dijon mustard

            1 ½ tbsp apple cider vinegar

            ⅔ cup ketchup

            ⅓ cup packed dark brown sugar

How to make Turkey Easy Meatloaf Recipe

FIRST STEP:

Preheat the oven to 350*

Spray a loaf pan with non stick cooking spray

SECOND STEP:

In a large bowl add the turkey, salt, pepper and the Worcestershire sauce

THIRD STEP:

Add bread crumbs, milk and eggs, minced garlic and minced onion, cumin, thyme and Italian seasoning

Mix well with your hands to combine all thoroughly

FOURTH STEP:

Shape into a loaf and place into a loaf pan

Bake for 35 to 40 minutes

Prepare the glaze while the Turkey loaf is baking

FIFTH STEP:

Stir together the apple cider vinegar, ketchup, brown sugar and the mustard to combine well

When Turkey Loaf is done, remove from the oven and brush the glaze on the top

FIRST STEP:

Place into the oven and bake for 10 more minutes

Garnish with green onion, slice and serve

Tips:

This Turkey Loaf can be served with roasted vegetables, mashed or baked potatoes and a small dinner salad. This is a low calorie meatloaf that will fill you up, but it will not weigh you down like so many others do. Take my advice, make a double batch of this, it will disappear right in front of your eyes.
