Apple Oatmeal Cookies

         Thick, soft and chewy is how I have to describe these cookies. Personally, I have never enjoyed an oatmeal cookie until now. Even an oatmeal scotchie could not do it for me. However, you throw in some apple bits with the oatmeal and I am all there. This is like having a bowl of delicious apple cinnamon oatmeal in an easy to carry form.

            ½ cup shortening

FIRST STEP:

Preheat the oven to 350*

In a large bowl, cream together the shortening and sugar

Beat in the eggs until combined thoroughly

Add in the flour, salt, cinnamon, nutmeg and baking powder, stir until combined
