Brown Sugar Grilled Pineapple

This is one of the most surprising summertime favorites in our house. We do love to grill, and we grill almost everything. So when we started seeing the pineapple come out at the beginning of the season, we grabbed it up.

We were all ready for that summertime feel. So with the grilled Pork chops that night, I threw on some pineapple rings. They were good, just not what I had imagined.

The next time I went uptown, I was perusing the Pineapples again and a woman stood alongside me, doing the same. I allowed myself to be gutsy and ask her if she had ever grilled pineapple.

This recipe is the one she happily gave to me, and I to you now. This is so tasty that I always make extra just so I can have some in the refrigerator to snack on.

            Do I have to use Cayenne pepper?

No, you could substitute chili powder if you would like.

            How do I store this once it is cooked?

Place any that remains into an airtight and sealed container and then into your refrigerator. The pineapple will last 3 to 4 days at most.

            Can I freeze the pineapple?

If you mean can you freeze it after cooking it, yes! Simply allow it to cool completely before wrapping it in plastic wrap and then aluminum foil. Or simply leave it in an airtight container and place it into the freezer for a couple of months.

What do you need to make Brown Sugar Grilled Pineapple

            1 fresh pineapple, peeled, cored and sliced into spears

            ¼ cup light brown sugar

            ¼ tsp cayenne pepper

            1 tsp vanilla extract

            ¼ tsp salt, optional

            Vegetable spray for the pan or grill

What do you need to make Brown Sugar Grilled Pineapple

FIRST STEP:

Prepare the pineapple as stated above

Place the pineapple spears into a large bowl and sprinkle with brown sugar, cayenne pepper, vanilla and the optional salt

Cover the pineapple in the bowl with a plastic wrap and place it in the refrigerator.

Let the pineapple marinate for 30 minutes

Save the juice from the bowl, you will use it later

SECOND STEP:

Heat the grill and spray with the vegetable oil

Place the spears on the grill and grill each side for 1 to 2 minutes

Heat the liquid from the bowl, in the microwave for 60 to 90 seconds, until bubbly, set the syrup to the side

THIRD STEP:

Remove the grilled pineapple and set on a serving platter. Drizzle a little bit of syrup over the spears
