Buffalo Chicken Taquitos

            These Buffalo Chicken Taquitos have been a popular recipe for a while now. This is a simple snack or meal to make. It is simply a taquito with buffalo chicken inside. You can mix this up in a bowl, or combine the ingredients and heat it up on the stove top. Either way will work. Speaking of simple things, I used 6 inch tortillas, heated up the mixture on my stovetop, put a strip of buffalo chicken in the tortilla and fried it. That is it. Nothing difficult, but your family will think you spent all day making these.

            Taquitos make an awesome afternoon snack, great for the kids after school, or a quick bite when waiting for dinner to cook. Taquitos can be eaten on the run. They are not the type of snack that will drip all over, they do not need a utensil to eat it and they are easy to share too.

Grab a few and go meet your friends at the park. Pack some up and take them to work for a quick snack. You do not have to spray the taquitos once you have them on the cookie tray.

However, not spraying them or brushing them with oil will have an affect on the texture and taste. You do not need much spray or oil, just enough to coat the top of the taquito.

            Can I make these ahead of time?

Yes, taquitos will actually reheat very well.

            After I fry mine, they get mushy, what is wrong?

After frying, it is best to line these up on paper towels on a baking tray, with some space between. These will become mushy if they are stacked or touching each other right after frying.

            My tortillas keep unrolling, why?

If you experience your tortillas having a mind of their own and unrolling, use a toothpick stuck in it. It will not be able to unroll.

            Should I use corn tortillas or flour tortillas?

You can use whichever you prefer. If you choose to use the corn tortillas, pre-fry them a little. Not too much, just enough to loosen them up.

            ⅛ cup Buffalo Sauce(more or less to taste)

            2 cups cooked and shredded chicken

            8 ounces Cream cheese, softened

            ¼ cup fat free cheddar cheese

            12 tortillas, corn or flour, your choice

How to make Buffalo Chicken Taquitos

FIRST STEP:

Preheat the oven to 425*

In a large mixing bowl, combine the buffalo sauce, shredded chicken, cream cheese and the shredded cheddar cheese

SECOND STEP:

Place about 3 tbsp of mixture in the center of the tortilla and spread out. Along the center

Roll each tortilla up lengthwise

THIRD STEP:

If your tortillas unroll, use a toothpick and stick it in the center so the tortilla cannot roll

Line these up on a lightly sprayed cooking tray

FOURTH STEP:

Once all the taquitos are lined up on the cooking tray, spray them with a layer of cooking spray

Bake for 15 to 20 minutes, or until the taquitos are a golden brown.
