I recommend just melting the caramels in the microwave. Put the rest into a saucepan and melt it on the stove top.
Can I use dark chocolate?
Yes you can! Dark chocolate is supposed to be a healthier version right?!
Can I use walnuts?
You certainly can, however, the classic Turtle Candy is known for its pecans.
Could I use white chocolate for one of the layers?
You can, that will add an extra step to the process. Like I said, there are so many varieties of fudge, it is ridiculous.
How do I store this fudge?
If you place the fudge into an airtight container it can last for two to three weeks, if you set it on the counter in an airtight container, the fudge will last for one to two weeks.
What do you need to make Caramel Pecan Turtle Fudge
1 ½ cups chopped pecans
1 tbsp vanilla extract
½ tsp sea salt
14 ounces Caramels, unwrapped
2 cups semi sweet chocolate chips
1 can, 14 ounces Sweetened condensed milk
1 tbsp heavy cream
How to make Caramel Pecan Turtle Fudge
FIRST STEP:
Line an 8×8 or 9×9 baking dish with parchment paper, if you do not have parchment, you can grease the bottom
Unwrap the caramels and place in a bowl, add the heavy cream
SECOND STEP:
Heat in the microwave on 30 second intervals, stirring each time, until the caramel is melted and smooth.
In a medium saucepan on medium heat, put the chocolate chips, sweetened condensed milk and the salt into the pan.
THIRD STEP:
Stir constantly as the chocolate chips melt. The mixture should be smooth
Add in the vanilla and pecans once you remove from the heat.
FOURTH STEP:
Pour half of the chocolate mixture in the bottom of your lined baking dish
Pour the melted caramel over this first layer of chocolate
FIFTH STEP:
Pour and smooth on the remaining chocolate chip mixture
Using a butter knife swirl through the to two layers to get the marbled effect
Cover and refrigerate until set.
This takes about 2 hours.
