This treat is a combination of multiple old fashioned flavors. You get oatmeal, caramel, chocolate, brown sugar and butter all formed together to make a treat that has been passed down generation to generation.

With a flavor similar to those cookies sold throughout neighborhoods each year, our Carmelitas recipe will be the one you turn to when you are asked to bring dessert or a treat for coffee.

            Should I use Old Fashioned oats or Quick Cooking?

For this recipe, you really need to use Old Fashioned Oats. This adds to the flavor and gives it more of a chunky texture.

            How should I store these Carmelitas?

I am impressed that you think there will be any left to store! Just kidding, I always make a double batch so that I can store some away just for me. These Carmelitas can be stored in an airtight container for up to 3 days at room temperature.  Place them in an airtight container and then into the refrigerator to store for up to one week.

What do you need to make Carmelitas

            ¾ cup Butter, melted

            1 cup Old Fashioned Oats(not quick cooking)

            1 cup All Purpose Flour

            ¾ cup Light Brown Sugar

            1 tsp Baking Powder

            12 ounces Caramels

            1 cup Chocolate Chips

            ½ cup Heavy Cream or Sweetened Condensed or Evaporated milk

How to make Carmelitas

FIRST STEP:

Preheat the oven to 350*.

Line an 8×8 or 9×9 baking pan with parchment paper. If you have the edges of the parchment go up the sides, this will make it much easier to remove the bars for cutting and serving

In a saucepan over medium high, add the caramels to the heavy cream and stir continuously until melted and blended well

Remove from the heat and set to the side for now

SECOND STEP:

In a large bowl, combine the oats, flour, melted butter, brown sugar and baking soda and blend well

Press half of this flour mixture into the prepared baking pan and press to form an even layer

Place in the oven and bake for 10 minutes

Remove the pan from the oven and sprinkle with the chocolate chips immediately

THIRD STEP:

Next pour the caramel mixture over the top of the chocolate chips and spread to an even layer

Drop bits of the remaining oatmeal mixture over the top of the caramel layer

Return the baking pan to the oven and bake for an added 15 to 18 minutes

Remove from the oven and allow to cool completely before removing to slice
