Cheesy Jalapeno Puffs

         This will become your favorite recipe when you need to have an appetizer for guests or family. Anything that is wrapped in a pastry dough is a favorite treat for me. These are easy to make, take very few ingredients and you do not need hours to make them. These cheesy jalapeno puffs have a kick from the pepper itself, which many love.

            There is one tiny issue with these however, they are totally addicting! They are great for sudden cravings, perfect for large crowds and they taste scrumptious!

Can I use Phyllo dough instead of the puff pastry?

You definitely can do that. There is a different method that you will need to use though. Not every puff pastry recipe can be switched out for Phyllo dough, as they will not taste or come out the way they are meant to. What you will need to do is to take at least three layers of Phyllo dough and brush each one with melted butter. You will then layer these on top of each other.

Why does my puff pastry dry out?

There is a trick that you need to remember every time you use Puff pastry. As the dough sits in the air, it will naturally dry out. For this reason, I always cover the dough with a wet towel as I am working on a recipe that calls for puff pastry.

Can I use the store bought puff pastry?

The store bought puff pastry is a superb method to making these jalapeno puffs. I buy it frozen and let it thaw completely in my refrigerator before using.

Do I need to use the mini muffin pan?

This is something that I highly suggest. If you use a regular size muffin tin pan, not only will your puffs separate, they will be too large. That means that this recipe will not feed as many as intended.  The mini muffin tins can be purchased at your local stores, at least in most areas.

What ingredients do you need for Cheesy Jalapeno Puffs

            1 pkg. 8 ounce cream cheese, softened to room temp

            1 cup shredded aged cheddar cheese

            1- 4 ounce can of diced jalapeno peppers

            14 ounces of puff pastry, thawed

            1 egg, beaten

            2 cloves garlic pressed

            3 green onions chopped

How to make Cheesy Jalapeno Puffs

FIRST STEP:

Preheat oven to 350*

In a mixing bowl combine the softened cream cheese, diced jalapenos, garlic, chopped green onions and aged cheddar cheese. 

Combine well.

SECOND STEP:

Cut the puff pastry into equal size squares and brush the edges with the beaten egg mix.

Place 1 ½ tsp of the filling in the center of each square.

THIRD STEP:

Very gently you will take the corners, from each side and slightly lift and pinch together.

Once you have all four corners done these will form a pocket of sorts.

FOURTH STEP:

Place each one into a mini muffin cup in the muffin tin.

Bake until golden brown.

Note: These can also be made by using the same pinching directions and placing them on a baking sheet lined with parchment paper, then baked.
