Chocolate Snowball Cookies

Here is a simple twist on the classic snowball Christmas cookies. This adds a little color and extra flavor to a Holiday Favorite treat.

I make these into a double chocolate treat by adding miniature chocolate chips in the batter. You could use white chocolate or even toss in some sprinkles of some kind.

I have many friends who simply add chopped walnuts or pecans in the batter. Either way you choose to do these is sure to please those that get the treats. These cookies actually have a few other names.

I grew up calling them Russian tea cakes or Mexican wedding cookies. They are all the same, with a simple name change.

            Could I use M&M miniatures instead of miniature chocolate chips?

Certainly you can! Especially if you can find just the red and green mix. This makes them perfect for the Holidays.

            How do I store these cookies?

These cookies can be placed into an airtight container and left on the counter for up to five days. They can also be stored in an airtight container and in the refrigerator for up to 2 weeks.

            Can I freeze these cookies?

They can be frozen, however, I do suggest that they be frozen before they are coated in the Confectioners sugar.

            Can I make these with a chocolate cake mix?

I would not suggest this, simply due to the fact that there are leavening agents, (baking soda or baking powder) in a cake mix. This recipe does not need either of those as we want the cookies to remain round.

What do you need to make Chocolate Snowball Cookies

            1 cup butter, unsalted and at room temperature

            ½ cup confectioners sugar

            1 tsp vanilla extract

            2 cups all purpose flour

            ⅓ cup unsweetened cocoa powder

            ½ tsp salt

            1 cup mini chocolate chips

How to make Chocolate Snowball Cookies

FIRST STEP:

Preheat the oven to 350* and line two baking trays with parchment paper

In a large bowl, combine together the butter, ½ cup confectioners sugar, cocoa powder and the vanilla extract

Add in the salt and the flour, mix until the dough forms

Fold in the miniature chocolate chips

SECOND STEP:

Scoop out the dough and roll into 1 inch diameter balls

If the dough is too sticky to roll easily, place the bowl, covered in the refrigerator for an hour to chill the dough

Place the balls on the cookie trays about 1 inch apart

THIRD STEP:

Bake for 10 minutes or until the bottoms are slightly light brown

Cool the cookies just long enough so that you can hold them

Gently roll them in the bowl of Confectioners Sugar

Set the cookies on a cooling rack

Once the cookies are completely cooled, roll them in Confectioners sugar once more
