Cinna-bun Cake in the Oven

         Cinnamon buns or cinnamon rolls are so yummy, I would be perfectly happy being able to eat them daily. Filled with ooey gooey cinnamon, and covered with a delicious vanilla glaze. I will not lie to you, the recipe does seem a little tedious, but it is so worth the time and effort.

You will know that once you take the first bite. This cinna-bun cake is the perfect breakfast as a special treat, it is also wonderful to bring to a potluck and picnic. Any church gathering or family event and you will see people drooling over their slice of the cake.

            I, personally, do not like nuts in my cinna-buns, however, many do so feel free to add them. If you do add nuts, choose a brand of pecans that are known for freshness.

            For another layer of flavor, you can mix in some raisins or diced apples. Also, the nuts are not listed in the recipe, so be sure to add them into the batter before baking.

This will make for a great quick breakfast. Double the batch and make two, keep one in the freezer for another morning.

Yes, you can! I bake mine in a freezer safe baking dish. Then wrap and it can be stored for up to one month in the freezer. This needs to be frozen before the topping is put on.

            Can I use a different glaze or topping?

You can use a cream cheese frosting for this cake if you choos. You could also make a homemade glaze or frosting. You could add a different extract for the glaze if you want it flavored. Such as orange, almond or any other flavor.

            Are there variations for this recipe?

If you want a fall inspired cinna-bun cake, add some pumpkin spice to the mix instead of the cinnamon.

            Can I make smaller cakes?

You could easily divide the batter into 3 loaf pans.

            Cake:

                        1 tsp vanilla

                        8 tbsp butter, unsalted and melted

                        1 ½ cups milk

                        2 eggs

                        3 cups all purpose flour

                        1 cup granulated sugar

                        1 tbsp baking powder

            Topping:

                        1 cup soft butter, unsalted

                        1 cup packed brown sugar

                        3 tsp cinnamon

                        3 tbsp all purpose flour

            Glaze:

                        ⅓ cup milk

                        1 tsp vanilla

                        2 cups confectioner’s sugar

FIRST STEP:

Preheat the oven to 350*

In a large mixing bowl, combine the flour, baking powder, sugar, vanilla, butter, milk and the eggs.

Spread into a well greased 9×13 cake pan

In another mixing bowl, combine the flour, brown sugar, butter and the cinnamon, mix well

Bake the cake for 40 to 45 minutes, until a toothpick inserted into the center comes out clean of cake batter
