With this dish, you can choose your favorites, make a combination of two or more and enjoy. The common vegetables that are added would be grated or chopped carrots and baby peas. I prefer broccoli and cauliflower. I also chop up some colored peppers to add in with the rice.

What do you need to make Fried Rice with Chicken

            3 boneless chicken breasts, skin removed

            1 cup brown rice, long grained

            2 tsp sesame oil

            1 tbsp olive oil

            2 ½ cups water at room temperature

            ¼ tsp salt

            1 tbsp ginger paste

            1 tsp minced garlic

            3 tbsp lite soy sauce

            3 tbsp water

            ½ cup chopped white onions

            Diced green onions for garnish

How to make Fried Rice with Chicken

Rice:

In a large pot, add the rice, salt and water

Stir to combine

Bring to a boil

When it comes to a boil, turn down the heat to low

Cook for 40 minutes, or until the liquid is absorbed.

Remove from the heat and set to the side

To Fry The Rice:

In a saucepan, add the eggs and scramble. Stir until cooked through

Remove from the pan and set to the side

Add olive oil to a large skillet

Cut up the chicken breasts into cubes

Add to the saucepan and fry on all sides

Stir in ginger, garlic, onions and pepper

Cook for 5 minutes to cook through and onions are soft

Add the rice and the water

Stir to combine well

Add in the soy sauce and sesame oil, stir to combine

Add in the cooked eggs and stir well

Remove from the heat

Garnish with chopped green onions
