Slow Cooked Pork and Potatoes

            I am about to give you a quick and easy meal that will be ready for you when you get home from work. I know that when the seasons start to change and I am stuck doing yard work like raking leaves, I do not want to stand in the kitchen struggling to make a meal.

Especially if I had to work my job too during the day. This wholesome and comforting food will cook all day while you do other things. Set it in the morning and no worries, food is ready when you are.

            Don’t you just love those meals that you can set and forget about until it is dinner time? This dish is made with ingredients that are likely in your pantry and refrigerator already.

This is a super simple meal. We are using cream soup, whether it is mushroom, celery, chicken or onion, the choice is yours.

            What type of potato do you use?

I prefer to use Yukon Gold in this dish. They hold up well. Russets would be great too. I avoid using reds since they are so soft and will flake apart as they cook in the sauce.

            Can I add in vegetables?

I have made this with carrots and broccoli. They were both good. You could also try squash, cauliflower or green beans.

            Can I store this in the refrigerator?

It can be left in an airtight container for 3 to 4 days in the refrigerator. In the freezer, wrapped in plastic and foil or in an airtight container for 3 months.

            How can I make this a gluten free option?

Instead of flour, substitute cornstarch as a thickener.

          

What do you need to make Slow Cooked Pork and Potatoes

            6 bone in pork loin chops

            4 medium sized potatoes, washed, peeled and cut into chunks

            1 large onion, cut into small chunks

            1 tbsp canola oil

            1 tbsp butter

            3 tbsp all purpose flour

            14 ounces of chicken broth

            ¼ tsp salt

            ¼ tsp pepper

            1 cup low fat milk

            (optional: add in carrots, green beans or vegetable of choice)

How to make Slow Cooked Pork and Potatoes

FIRST STEP:

Spray the slow cooker with non stick spray

Place the chunky potatoes in the bottom of the crock pot

SECOND STEP:

In a skillet, lightly brown the pork chops, in the canola oil

Place the browned pork chops on the top of the potatoes

THIRD STEP:

Place the cut up onion in the skillet without cleaning it. Saute using the oil and juices from the pork chops

Put the sauteed onions on top of the pork chops

FOURTH STEP:

In the same skillet, melt the butter and whisk in the flour.

Add the salt, pepper and the chicken broth

FIFTH STEP:

Stir until well combined and beginning to thicken

Pour this sauce over the top of the onions in the crock pot. 

The sauce will slowly pass on down through all the ingredients and they will then have all the flavor of the sauce

SIXTH STEP:

Cover and cook on low for 6 to 8 hours, or high for 4 hours

Skim off any fat that accumulates and thicken the sauce more if desired
