Crispy Hashbrown and Sausage Bites

Hash Browns are a breakfast staple. They are eaten in virtually every state in the United States. They are made for breakfast, lunch and dinner. They are just that versatile. So as I was sitting and thinking about eating lunch one day, I remembered that I had some sausage thawed out in the refrigerator and also had some hashbrowns in the freezer.  Yes! That light bulb turned bright in my brain.

What if I mix up the sausage and then combine the hashbrowns inside of it and bake them? Well, it turned out to be one of the best ideas I have had this week. They tasted so good! So I wanted to try it out on my family that evening.

I mixed up another batch of sausage and hashbrown balls and then cooked up a pan of scrambled eggs. Everything was devoured! I had absolutely no leftovers for me for the next day!

I have since this day, used these as a dinner meal, breakfast dish and even brought them to a potluck as an appetizer. These are so tasty and can be mixed with just about anything.

Substitutions and Variations:

            The frozen hash browns work just as well as freshly grated potatoes do in this dish.

            You can use whichever flavor of cheese you and yours like. My family prefers the colby jack.

            You can used a plant based sausage for a vegan meal

            Add bacon bits or jalapeno pepper to the sausage mix for a taste explosion.

Can I add vegetables?

Some vegetables would be a great idea, such as bell pepper, mushroom or           tomatoes. If you want to use it as a dinner plan, mix in some finely chopped broccoli, chopped baby spinach or even some green cabbage.

Can I freeze the hashbrown and sausage bites?

Wait, you expect leftovers? Good luck! Yes, they can be frozen. Cover with plastic wrap and then a layer of aluminum foil.  Thaw in the refrigerator overnight to eat the following day.

Could I serve these as an appetizer?

Certainly! Have a variety of dipping sauces available, such as Hollandaise sauce, barbecue, sour cream, syrups. Anything that strikes your fancy as a dip will work.

Could I use a different meat?

Of course, the best recipes are those tested in multiple ways. Try these with ground turkey, ground chicken, pork or beef. Let me know how they turn out! Swapping out the meat for another kind will open the doors to all sorts of flavor combinations.

How to make Crispy Hashbrown and Sausage Bites

FIRST STEP:

Preheat the oven to 400*

Line a baking sheet with parchment paper

SECOND STEP:

In a mixing bowl combine the sausage, softened cream cheese, cheddar cheese, hash browns and the bisquick.

Stir until well combined

THIRD STEP:

Using a scoop or your hands, make balls about 1 ½ inches in size, place on baking sheet

Bake for 20 to 25 minutes or until thoroughly cooked.

  • 1 pound ground breakfast sausage
  • 1 ½ cups Bisquick
