If you’re like me, you love cucumbers! I love cucumbers in my salad, on my sandwiches, and even by themselves. There’s nothing quite like a fresh, crisp cucumber to me, so this recipe is a go-to for me quite often.

The crunchy salsa with fresh cucumber recipe is definitely a favorite every warm season. I love pulling from my own garden or visiting the local farmer’s markets and getting fresh produce for this recipe. I get so excited each summer specially to make this crunch salsa! It seriously is so delicious you too will fall in love with its flavors. Serve it with some chips for a nice double crunch!

What makes this salsa special?

For this recipe, cucumbers are the star! In regular, or other salsa recipes, you often find that the tomato is in charge of the flavor. Tomatoes lend a lot of acid to salsa and that makes those recipes rather hefty on the taste buds. While this recipe still calls for some tomato, the tomatoes are the co-stars. However, I did choose colorful tomatoes to really make the dish pop with all the appetizing and aesthetically pleasing colors.

This crunchy salsa with cucumbers is flavorful but not overpowering. Meaning, this salsa can be used as a topping without taking over. You can use it on tacos, chips, fish, etc. The best toppings always add to the flavor of something and don’t take away or mask the other’s taste. Even on a tortilla chip, you’ll find that this salsa lends to the experience of the snack or meal.

What are the ingredients?

To make crunchy salsa with cucumbers, you’ll need a few ingredients. First of all, you’ll need cucumbers. Can’t forget those on this one, you guys! Other ingredients include tomatoes (I prefer colorful ones), a red onion, garlic, jalapenos, a little cilantro – you’re most of the way there!

A great tip for salsa is to chop your veggies evenly as you’re preparing them. What this means is all your pieces are the same size, or as close as you can get them at least. If your veggies are the same size, this allows for equal distribution of flavor and infusion and melding of flavors. So, take your time chopping your veggies! The result will be an equally flavored salsa that’s also lovely.

To complete the recipe, you will have to make a lovely concoction, or ‘salsa sauce’ as I call it, of red wine vinegar, lime juice, a smidge of salt, and a bit of cumin. You pour your ‘salsa sauce’ in with the veggies, pop it in the fridge, and bon Appetit!

Some Tips for Crunchy Salsa with Cucumbers:

  1. Did you know there are different types of cucumbers? Crazy, right? It does make a difference which cukes you use. For this recipe I use corrinto. Another type of cucumber is English. English will work for this salsa; however, the feel and firmness are different.
  2. In a pinch, you can chop up your vegetables using a food processor. Using a food processor will definitely change how your salsa looks, but it will still taste ok!
  3. For a photogenic salsa to wow the masses, definitely chop your vegetables by hand with a knife. I promise, 10 minutes tops on this recipe once you get those vegetables done! As mentioned, be sure to chop evenly for the best look and flavor distribution.
  4. Invest in nice knives and/or a knife sharpener. Fresh vegetables can be a pain to cut with a bad or dull knife. Not having a good and sharp knife also increases your chances of cuts, wrist pain, etc. Definitely get a nice set if you don’t have some.
  5. Salsa can be made for different heat levels. You can do the same with this recipe. Feel free to add in something hotter the jalapeno—or something milder too, if that’s your taste preference.

1-1/2 tsp lime juice

1-1/2 tsp lemon juice

1-2 tbsp parsley, minced

FIRST STEP:

Combine lemon juice, sour cream, cumin, salt, and lime juice in a bowl to make the ‘salsa sauce’.

I don’t peel the cucumbers and leave the skin on. The vegetable is crisp and delectable! The green in the salsa is also gorgeous and aesthetically pleasing as well. Definitely try it will the peeling on first.
